Yeap, it is fig season again I am more than excited as I am a sucker for fresh figs. Could eat them all day - every day, they are just so scrumptious. My partner thinks that they are pretty tasteless, but let's face it, he does not know what he is talking about. You know he is a kind of a steak, chips and wine kind of a guy, oh and caramel guy, yes. If he could he could live just on the above. I am sure he agrees.

This salad tastes amazing. It is sweet, salty, juicy, crunchy and the combination of ingredients just blends beautifully. Crispy and sweet apples, juicy and soft fresh figs, salty and creamy feta cheese and toasted walnuts with honey and brown butter sauce. All of these beautiful ingredients are served on a fresh salad leaves sprinkled with pumpkin seeds and drizzled with freshly squeezed lemon juice. The variety of textures and flavours makes this salad irresistible.

Description

Sweet, crunchy, savoury and utterly delicious. This apple fig and feta salad with honey walnuts is just a great idea to make this apple and fig season.

Ingredients
  • 1 apple (washed, a crispy variety (I used pink lady))
  • 2 fig (fresh, washed and cut into quarters)
  • 70 g feta cheese (crumbled)
  • 100 g green leaves (washed)
  • 20 g walnuts (roughly chopped)
  • 1 tsp honey
  • 1 tsp pumpkin seeds
  • 1 tbsp butter
  • 1 tbsp lemon juice
  • 1/8 tsp salt (table)
Instructions
  1. Add green leaves into a medium bowl.

  2. Add sliced apple and figs.

  3. Add crumbled feta cheese

  4. Place walnuts on a small pan and toast them for few minutes.

  5. Add butter and honey to the walnuts and stir making sure walnuts are covered in the mixture.

  6. Cook for few minutes until butter is brown.

  7. Scatter the walnuts on top of the salad and add the buttery dressing as well.

  8. Drizzle with lemon juice and season with salt.
