Let me tell you that the below recipe for apple pie with candied walnuts is not good, it is wonderful!!! I am sure nobody will be able to resist it!

How to make apple pie with candied walnuts?

First make the pastry dough. Just mix all the ingredients in a medium bowl until it comes together. Then you need to divide it into two portions, flatten it and let it chill in the fridge. When it comes to apple pie filling, this apple pie is different from a standard apple pie as you do not need to chop the apples. Just peel the apples and remove the seeds and cut apples into half. This is it. The apple halves will be chunky but soft after baking. Making candied walnuts is pretty straightforward. Melt butter and sugar, add walnuts and this is it. Oh, do not forget to toast your walnut first! Then arrange first layer of pastry in a baking tin, add the walnuts, then apples, then second layer of pastry dough and sprinkle some sugar. Now, you are ready to bake!

This dessert tastes lush. It is more substantial than the standard apple pie as the layer of a tangy cream cheese pastry dough is quite thick and substantial. The chunky apples covered in cinnamon have a nice bite to it. What else? Walnuts, of course! Apple and walnuts work well together and create the best desserts. A generous layer of buttery candied walnuts adds sweetness and of course nuttiness and a lovely crunchy layer.

Yes, custard. Most people think that apple pie has to be served with ice cream, BUT you need to try apple pie with vanilla custard, this is THE thing! My better half introduced me to this way of eating apple pie and it was a game changer. BUT, to be fair, I can not pick if I prefer apple pie with ice cream or custard, I like it both. In fact, why not just add ice cream on top of apple pie and then top it with custard??

Description

A very easy and delicious recipe for an apple pie. This apple pie is different as this recipe uses whole apples which are placed on a wonderful layer of candied walnuts.

Ingredients
    Apple pie crust
  • 480 g AP flour
  • 70 g powdered sugar
  • 1 and 1/2 tsp baking powder
  • 1 egg (large)
  • 200 g cream cheese
  • 1/2 tsp salt
  • 1 tsp vanilla (extract)
  • 30 g sugar (Demerara, or any coarse sugar to sprinkle on top, for extra crunch)
  • Apples
  • 6 apple (large, peeled and core removed, cut into half)
  • 2 tbsp cinnamon (powder)
  • Candied walnuts
  • 200 g walnuts (finely chopped)
  • 80 g butter
  • 60 g brown sugar (soft)
Instructions
    Apple pie crust
  1. In a large bowl add AP flour, powdered sugar, baking powder, salt, vanilla and cream cheese and mix for 5 minutes until  pastry dough starts to come together.

  2. Add egg to the mix and then mix until egg is fully incorporated and pastry dough is smooth.

  3. Prepare a large piece of a cling film, spread it on a clean surface and then place the pastry dough on top.

  4. Divide pastry into half and flatten it into discs.

  5. Cover the pastry discs in a cling film and place in the fridge for an hour.

  6. Apples
  7. Peel apples, cut them into half and remove the cores.

  8. Set the apples aside.

  9. Candied walnuts
  10. Toast walnuts on a medium pan and then move them to a bowl.

  11. On the same pan add sugar and butter and let it melt.

  12. Add walnuts to the mixture and stir well, making sure that all walnuts are covered in the butter mixture.

  13. Cook for about 5 minutes. Set aside.

  14. Assembling apple pie
  15. Preheat your oven to 170°C fan.

  16. Prepare baking tray, I used 27cm x 18cm baking tray. Line it with a baking paper and set aside.

  17. Take out pastry dough from a fridge and roll it to the shape of your baking tin.

  18. Line one piece of your pastry dough  on the bottom and press it firmly with your fingers.

  19. Spread candied walnuts on the bottom.

  20. Add apples on top and sprinkle apples with cinnamon.

  21. Place second part of pastry dough on top of the apples and press to make sure that apples all covered with the pastry.

  22. Sprinkle coarse sugar on top.

  23. Bake in an oven for about one hour.

  24. When it is ready, remove apple pie from your oven and let it cool.

  25. Serve with custard or ice cream.
