Irresistible Biscoff apple pie with Biscoff cookie spread and crushed Biscoff biscuits is on the menu today.
I know that apple season is not here yet. That doesn't mean I can't make apple pie in April, right? Especially if this is Biscoff apple pie. Yes, guys, you read it right. This is my new idea for homemade apple pie and I could not wait to share this recipe with you! This pie is to die for!
Lotus Biscoff spread is an incredibly delicious cookie spread made by Belgian company Lotus Bakeries. It has a fantastic caramelised flavour with a hint of spice. Like a mild version of a gingerbread I would say. When is comes to consistency, you have an option between creamy or crunchy Biscoff spread. This is at least what you can get in shops in the UK. I am not sure about the availability in other countries.
I menitoned Biscoff spread but can not forget about iconic Biscoff biscuits. Cute, rectangular, light brown, crunchy biscuits. Just perfect as a snack with your coffee or as a part of your future favourite dessert Biscoff apple pie!
Oh, yes! It is very easy to make and you can prepare particular parts of this dessert in advance. You can make pastry for this pie even four days ahead and store in the fridge until ready to use. You can cook apples a day earlier. Then, the next day, just put everything together and bake your beautiful pie.
There are two tips that are worth mentioning. First, do not add sugar to your apples! The sweetness from apples and cookie butter is more than enough. Second tip involves cooking the apples until you get just the right amount of liquid. Apples can not be too wet as the pastry will become soggy. On the other hand, they can not be completely dry. Bear in mind that cookie butter will draw moisture from the apples and will make it dry. Leaving about 60-80 ml of liquid should be just enough.
It tastes absolutely wonderful! Chunky, sweet and tangy apples mixed with sweet, caramelised, smooth Biscoff cookie butter. You will not believe how addictive and wonderful this combo taste. I have added crushed Biscoff biscuits on top in order to create an additional layer of texture and add more indulgence to this simple dessert.

Irresistible apple pie with Biscoff cookie spread and crushed Biscoff cookies
Peel apples and remove the cores.
Cut apples into small cubes and place all the apples into a large pot.
Add juice from one lemon, water and cinnamon. Stir well.
Cook the apples on a medium heat for about 10-15 min until soft and until water reduces to a minimum. By this, I mean you should be aiming for about 4 tbsp of water remaining in the pot.
Let the apples to cool down for 5 minutes.
Add Biscoff spread to the apples and stir well making sure all apples are covered in Biscoff.
Let the filling to cool down before you add it on your pastry.
In a medium bowl mix sugar and butter until you get small crumbs.
Add salt, water and flour and mix until pastry forms.
Flatten your pastry, wrap it in a cling film and place in the fridge for 30 min
After this time, take the pastry put of the fridge.
When you are ready to bake, preheat your oven to 180°C fan assisted oven.
Prepare 20 cm round pie baking tray with removable bottom. Set aside.
Divide your pastry into half.
Roll both of your pastry portions on a working area, about 0.6 cm thick. Add some flour if necessary.
Transfer one portion of your pastry to the baking tin. Press the pastry gently to the bottom and to the edges of your baking tray.
Take the second part of your pastry and using cookie cutters, cut out different shapes. Set aside.
Add apple and Biscoff filling on top of your pastry and spread it evenly.
Crush Biscoff biscuits on your apples.
Arrange pastry shapes on top.
Brush your pastry with egg wash.
Bake your apple pie in the oven for 35-40 min.
When apple pie is ready, remove it from the oven and let it to cool down.
Store in the fridge for up to 4 days.
