I was in a mood for a tasty salad with a twist and came up with this recipe. If you have not tried adding Serrano ham crumbs to your salad, you should definitely check it out.

How to make burrata tomato corn salad with Serrano ham

Making a salad is usually pretty straightforward but in this recipe there are three extra steps that will take few more minutes.

  1. You need to char corn. Which means taking corn on the cob, place it on a hot dry pan and cook corn until it gets black a little bit.
  2. The second step is to fry Serrano harm until it is cooked very well. Juts add the ham on a dry pan and fry it. (Do not add any oil). When it is ready, let ham to cool down and crisp up.
  3. The third step is to toast/fry mixed seeds on the same pan you used for frying ham.

Now you can add all the ingredients in a big bowl and enjoy your meal.

    What can I say? This salad recipe is flavourful and extraordinary. Every bite is packed with so many flavours and textures. The sweet charred corn, the tart picollo tomatoes, crunchy peppery rocket salad, creamy and tangy burrata cheese and again crunchy and salty Serrano ham and nutty mixed seeds. All of it drizzled with fresh lemon juice and walnut oil.

    The below recipe is supposed to be for one person if its for dinner. If you want to serve this salad for two people for dinner or lunch you can add a slice of bread on the side. For example chorizo soft pretzel bread, cheese and herbs brioche bread or homemade tiger bread.

    Description

    Perfectly balanced , sweet and salty, crunchy and creamy salad with burrata, Serrano crumbs, chargrilled corn and tomato. Sprinkled with mixed seeds.

    Ingredients
    • 100 g rocket salad (washed and dried)
    • 20 tomatoes (piccolo ( which are sweeter than cherry tomatoes), cut into half)
    • 1 ball burrata (cheese)
    • 1 corn (on the cob, husk removed)
    • 30 g mixed seeds (toasted)
    • 2 slices Serrano ham
    • 1 lemon (juice of half lemon)
    • 30 ml walnut oil
    • salt (sea, to taste, optional)
    • black pepper (ground, to taste, optional)
    Instructions
    1. Add rocket leaves into a big bowl.

    2. Add burrata on top of the salad leaves.

    3. Cut tomatoes into half and scatter it on the salad leaves.

    4. Chargrill corn on the cob on a dry pan or grill until soft and black spots are visible. Let the corn cool down for few minutes and then cut the kernels with a knife and scatter them on the salad.

    5. While you chargrill corn, fry Serrano ham until crispy, let it cool down (ham will become more crispy as it cools down). Brake the slices into small pieces and scatter it on top.

    6. On the same pan, toast your seeds and then add on top of the salad.

    7. Drizzle walnut oil and lemon juice on top.

    8. Add salt and pepper if needed.
