Who does not like roasted potatoes? Yes, I know, everybody does! This time on my table you can find a Swedish invention - buttery Hasselback potatoes.
The below recipe requires some effort but the results will blow your mind. This simple potato side dish recipe is very easy to make and will be a great addition on your dinner table. It looks very interesting and is a real crowd-pleaser.

Actually, the creator of this technique was a Swedish chef Leif Ellison. He was a trainee chef in a restaurant called Hasselbacken in Stockholm. Well, I can only say "thank you chef" for this lovely idea! Simple, yet, genius and delicious.
These potatoes may look difficult to make, but they are not. But... you need to know the trick how to cut them without losing your s***
Just take 2 wooden spoons, kebab sticks or any other kitchen utensils of this sort, place them on the chopping board, then place potato between and slice it. The knife will stop on the spoons and that is how you get this perfect Hasselback potato.
When potatoes are ready brush a generous amount of melted butter, making sure that you brush between most of the potato layers as well. I recommend placing potatoes in a deep baking dish so they hold their shape nicely. Roast/bake potatoes for about 60 minutes and during this time add more butter to the dish. Serve hot.

TIPS:
Scrumptious, this is the answer! The flavor is rich, buttery and slightly sweet. Fresh parsley adds nice aroma to the dish.
The texture of this dish is fantastic. The potatoes are fluffy and soft in the middle and crispy on the edges.

I love serving this roasted buttery hasselback potatoes to my family and friends. This easy dish always gets many compliments. I usually serve it with chicken breast in garlic and white wine sauce, Mexican roasted spatchcock chicken or turkey steaks with harissa and Parmesan and many other meat or fish dishes.

This easy potatoes dish is a fantastic option for a family dinner, BBQ or a game night. Potatoes are soft and crispy and smothered in melted butter and parsley.
Wash your potatoes and dry them with paper towel. Set aside.
In a small pot melt butter with salt and parsley, set aside.
Preheat an oven to 200C Fan (392F).
Place 2 wooden spoons or kebab sticks on a chopping board.
Place one potato between the sticks and slice thinly until the knife reaches the wooden spoons. This trick will help to cut potatoes nice and thin without cutting it through. Repeat this step will all the potatoes.
Arrange your sliced potatoes on a baking tray or a baking tin, brush butter on top and between the slices and place potatoes in the oven.
Every 10 minutes or so, remove the potatoes from the oven and brush more butter on the potatoes.
Bake potatoes for about 1 hour, until cooked through and crispy on the edges.
When potatoes are ready, remove from the oven and add more butter on top.
Serve hot.
