I am in a salad mode right now. We'll see how long I will last. So far so good! Although, I am dying for a doughnut :) Shhh, I did not say that! So, speaking of salad I came up with this idea for a very refreshing, colourful and healthy salad - citrus burrata salad with poppy honey dressing. Just perfect option for dinner, lunch or whenever you feel like having a nutritious meal.

How to make citrus burrata salad with poppy honey dressing

Making salads is dead easy and the only thing to do is to add all the ingredients on a plate and pour the dressing.

When it comes to dressing, you need to add honey on a warm pan and let it melt then add lemon juice, olive oil and poppy seeds. Then mix everything and the dressing is ready.

Tips:

  1. When you peel citrus fruit, do not forget to remove white membrane underneath the peel. It is bitter and will affect the flavour.
  2. I have cut fruit into slices but fell free to cut it into smaller chunks.

What does citrus burrata salad with poppy honey dressing taste like?

Sweet blood orange, bitter grapefruit, tangy and sweet kiwi - what a tasty mix! But wait, this is not all of course. Creamy burrata cheese, OMG, this cheese is my favourite cheese ever. So creamy and dreamy and just lush. To make this salad even more nutritious I have added a 'p*** me off' avocado. I am sure you all know what I am taking about.

You buy unripe avocado thinking it will be ready in 2 days and then the next day it goes all black, Just like that. How many avocados I binned, f***** A LOT! So I try to use it right away after I buy it.

BTW did you know that avocado is a berry? I did not know it until today. Now you know it too :)

Time for dressing. This is a very simple but unusual dressing. It is not very strong but it adds this extra sweetness to the mix. Honey, olive oil, lemon juice and poppy seeds - this is all but it really makes this citrus and burrata salad come together. Poppy seeds may be an unexpected choice, but I think they are just perfect, add this tine crunch and contrast to the dish.

This salad is healthy, gluten-free, packed with vitamins and minerals. It has loads of fibre as well.

Description

Tangy and sweet salad with creamy burrata drizzled with warm honey and poppy seeds dressing.

Ingredients
    Salad
  • 2 kiwi (peeled and sliced)
  • 1 avocado (peeled and sliced)
  • 1 grapefruit (peeled and sliced)
  • 1 blood orange (large or 2 small oranges, peeled and sliced)
  • 100 g salad leaves (I used little gem lettuce)
  • 1 burrata (cheese)
  • Honey and poppy seed dressing
  • 1 tbsp poppy seeds
  • 1 tbsp honey (heaped)
  • 4 tbsp olive oil (extra virgin)
  • 1/2 lemon or lime (juice)
Instructions
  1. Arrange salad leaves on a plate.

  2. Add sliced avocado.

  3. Add slices of orange, grapefruit and kiwi.

  4. Add burrata cheese on top.

  5. Dressing
  6. Warm up honey on a small pan, add olive oil, lemon or lime juice and poppy seeds. Mix well.

    Pour dressing over the salad.

  7. Serve immediately
