These golden delights are diabetic friendly chocolate chunks cookies made with almond flour and xylitol. This recipe is great for people who have to avoid carbs.
Cookies! I hope you have not had enough of cookies so far. You have seen a lot of cookie recipes on my blog as I am in a cookie mode at the moment. I have received many messages from people asking me to post some diabetic friendly cookie recipes. So, I looked and tested some cookie recipes for diabetics and the below recipe got my attention. The results are very satisfying and very tasty.
How to make diabetic friendly chocolate chunks cookies?
You basically have to mix all the ingredients together as mentioned in the recipe instructions below and bake. This is it.
My only comments, or tips are the following:
Do not feed these cookies to animals as they contain xylitol!
When you are creaming butter and xylitol, please bear in mind that xylitol will not dissolve but do not worry as you will not taste any xylitol crystals in your cookies. Please remember that xylitol has laxative effects if eaten in bigger amounts. I am sure if you have 2 or 3 cookies , nothing should happen but if you have 10 cookies then you may need to run to the toilet :)
Pay attention to carbs in peanut butter and in chocolate you are using. I was shocked when I realised that some peanut butter brands have the same amount of carbs as chocolate. Pick wisely.
You can, of course substitute xylitol with other low-carb sweeteners. I have tested this recipe also with erythritol and Spenda. The last favourite was erythritol, I did not like the metallic aftertaste.
When I made these cookies for the first time I was sceptical and did not have high expectations. I was wrong as these cookies are very very very tasty. I asked my diabetic friend to taste these cookies. Another friend who follows low-carb diet tried them as well. They both agreed that they will not be buying any low-carb cookies again - they will make these diabetic friendly chocolate chunks cookies instead. DELISH - they said! And cheaper than shop-bought.
Diabetic approved, low carb approved, loaded with chocolate! Sugar free of course :)

Diabetic friendly, low carb chocolate chunks cookies made with almond flour.
In a medium bowl cream together butter and xylitol for about 3 minutes. Just to say that xylitol will not dissolve but this is ok. IMPORTANT, do not feed these cookies to animals as they contain xylitol!
Add peanut butter and egg and mix well until fully combined. For about 5 minutes.
Mix almond flour, salt and baking powder and add the mixture to the butter mixture.
Stir in chopped chocolate.
Place bowl with your cookie dough in a fridge for about two hours or overnight.
When you are ready to bake, prepare 2 baking sheets lined with baking paper and set aside.
Preheat your oven to 170°C fan.
Divide cookie dough into 20 balls. About 27g each.
Place cookie balls on the prepared baking tins. Leave a generous space between each cookie as they will spread.
Flatten each cookie ball a little bit.
Bake cookies for about 13-15 min until golden.
Leave the cookies on baking sheets and let them cool completely. Cookies are soft when they are hot (straight from the oven).
Store cookies in an air-tight container for up to 2 weeks in a room temperature.
