How to make fig and whisky jam?

When picking figs for this recipe, make sure you pick the ripe ones. They should be quite soft to the touch and have a nice purple colour. When it comes to whisky - I will be probably murdered here by all whisky lovers, who think that any whisky used for cooking is a waste - pick the one you like. I am obviously biased and would recommend a wonderful Scottish whisky, but in fact use whatever you have access to.

This recipe makes one portion of jam, which is about 250g.

To make this recipe, you need to cut fresh figs into smaller pieces, place them in a medium pot together with sugar and water. Cook until figs fall apart. Then using an immersion blender blend the figs until smooth. You can omit this step if you like your jam more chunky. Then cook jam until it thickens. Next step is o add whisky and cook until liquid evaporates.

Plump and ripen figs, whisky, sugar and water. This is all you need to make this jam and stuff your face with it, and it will happen trust me :)

This fig and whisky jam is sweet, earthy and tastes very sophisticated. Adding a sprinkle of flaky salt elevates the taste to another level - you need to give it a try.

How to serve fig and whisky jam?

This jam is great smothered on a slice of tiger bread or low-carb sesame seeds bread orb a cracker. Top it up with your favourite cheese and you will be in a food heaven.

Description

Sweet jam made with fresh figs and few shots of Scottish whisky

Ingredients
  • 10 figs (fresh, washed and chopped)
  • 100 ml water
  • 70 ml whisky (Scottish is the best :), any)
  • 30 g brown sugar (light)
Instructions
  1. Add figs, water and sugar into a medium pot, mix and let it simmer until figs start to soften and fall apart. Keep stirring from time to time so fruit does not burn.

  2. Take the pot off the heat and using an immersion blender blend the mixture - please notice that this step is optional. I like my jam smooth but if you prefer jam with texture, just omit this step.

  3. Once fruit is blended, the mixture should be thick and sticky. Now add whisky and stir well.

  4. Let the mixture simmer until liquid evaporates and jam becomes thick.

  5. Let it cool down and transfer jam to a jar.

  6. Store in the fridge for up to 2 weeks.
