A very easy recipe for sweet, zesty and spicy ginger and grapefruit curd. Ready in under 20 minutes, gluten-free, vegetarian and heavenly refreshing.

It always happens. I buy grapefruits as they are healthy and I never eat them. I mean I never eat them raw as they end up squished to the limits to make this smooth delicacy - ginger and grapefruit curd.

How to make ginger and grapefruit curd?

This recipe is great for beginners. You don need any special skills to make this bright looking dessert. It comes together in under 20 minutes.

In order to make it you need to add all the ingredients in a medium pot - leave the butter out as it will be added later. Then you need to mix everything on a medium heat until all the elements will come together and create a smooth and thick mixture. The add butter and cook for a minute or so until butter is incorporated. Let is cool down completely before transferring to a jar.

How to store ginger and grapefruit curd?

Store your curd in a fridge for up to a week of freeze it up to 3 months.

This recipe makes about 300ml of curd.

What does this curd taste like?

I am obsessed with this curd. The dominant flavour is definitely ginger and I always use fresh ginger to make this curd, it makes a massive difference. I tried to use powdered ginger but was not impressed with the outcome. So run to the shop and get fresh ginger, NOW!

When it comes to the grapefruit taste, it is not strong at all - it is more a hint of grapefruit. No bitterness. I am just saying it so there is no disappointment in the hearts of people who love the taste of grapefruit.

This ginger and grapefruit curd does not last long in my fridge as I always end up spreading it on a toast or make super delicious and creamy ginger and grapefruit cheesecake bars with coconut crust. Sweet and spicy ginger and grapefruit curd

Ingredients
  • 1 grapefruit (washed, juice and zest, you should use 140 ml juice)
  • 40 g fresh ginger (weight after peeling ginger, grated)
  • 2 eggs (large)
  • 2 egg yolks
  • 150 g sugar (white, granulated)
  • 50 g butter (unsalted)
  • 20 g potato (starch)
Instructions
  1. In a medium pot add all the ingredients together, apart from butter.

  2. Heat up the pot and keep the flame on a medium heat.

  3. Keep whisking the ingredients constantly until the curd starts to thicken. Curd burns easily so make sure you reach to all the ingredients on the bottom. I would recommend using a spatula to stir your curd with.

  4. Remove the pot from the heat and add butter.

  5. Keep stirring until the butter melts and your curd becomes thick and shiny.

  6. Let the curd to cool down and transfer it to a jar.

  7. Store the curd in the fridge for up to a week.
