Wonderful sweet and salty, gluten-free peanut butter cookies that are made only with 5 ingredients. 

Today, I would like to share this new cookie recipe which I found on the Internet. These cookies have been created in 'Ovenly' bakery in New York. I was intrigued by the sweet and salty flavour combination in a cookie and that is why I had to check out the recipe. The results are glorious! These cookies turned out better than expected. If you are a type of person who enjoys sweet and salty popcorn, these cookies are definitely for you.

How to make gluten-free peanut butter cookies

I think this cookie recipe is the easiest on my blog so far. Honestly, you only need to mix eggs, sugar and vanilla until the mixture is light, fluffy and pale. Then add peanut butter and mix until all the ingredients are fully combined. Let the mixture rest at room temperature for 10 minutes. Then scoop the cookie batter on the prepared baking sheets and bake for 15-18 minutes at 160C/320F.

This recipe makes 14 cookies.

TIPS:

  • I used creamy and smooth peanut butter that was quite thick. If you are using natural runny peanut butter you may have different results.
  • Adding salt is completely optional but it really adds extra layer of flavour

I think I am running out of adjectives to describe all the cookies I am posting on my blog. These gluten-free cookies are marvelous. The texture is fudgy, chewy, dense but soft. The flavour is loaded with peanut butter and a hint of salt adds savoury notes to these golden beauties.

How to store gluten-free peanut butter cookies

You can store these cookies in an air-tight container at room temperature for up to a week. You can also freeze them in a zip-lock bag for up to 3 months.

Description

Wonderful sweet and salty peanut butter cookies that are made with only 5 ingredients. 

Ingredients
  • 340 g peanut butter (smooth, creamy)
  • 200 g brown sugar (dark, soft)
  • 2 eggs (large)
  • 1/2 tsp vanilla (extract)
  • 5 g salt (sea, flakes, to sprinkle on top)
Instructions
  1. Preheat your oven to 160°C fan.

  2. Prepare 2 baking sheets lined with baking paper and set them aside.

  3. In a medium bowl add sugar, vanilla and eggs and mix until the mixture turns light and foamy. About 8 minutes

  4. Add peanut butter and mix until fully combined.

  5. Let the cookie batter rest for 5 min at room temperature.

  6. Scoop the cookie batter into 14 portions (I used an ice cream scoop).

  7. Sprinkle your cookie portions with salt flakes.

  8. Place cookies in the oven for about 15-18 min.

  9. When cookies are ready, remove them from the oven and sprinkle more salt on top (adding salt on top is optional but it will enhance the flavour).

  10. Let the cookies cool down.

  11. Store cookies in an air-tight container at room temperature for up to a week. You can also freeze cookies for up to 3 months.
