I make these easy almond cookies all year round. They come in handy for any occasion, are very inexpensive to make and require only 6 simple ingredients.
These recipe makes about a 100 cookies, depending on the shapes and sizes. You can of course half the recipe if you wish.
In order to make these cookies, you only need to combine all the ingredients together until it forms a consistent cookie dough, chill cookie dough in a fridge for an hour and the roll the dough, cut out cookies, chill for 20 minutes and bake. This is it.

The consistency of these cookies is crispy but soft. They have a perfect firm bite. The marzipan flavor shines through. It is rich with a warm nutty aroma. If you like almond cookies you will love these marzipan cookies.

These cookies store very well. You can store them in an air-tight container or in a cookie box. at room temperature for up to a week. Marzipan cut out cookies are freezer-friendly. In order to freeze these cookies, place them in a plastic bag and freeze for up to 6 months.

I always recommend using a kitchen scale to weigh ingredients as it helps to achieve the best results. The US measurements in cups are the estimate and I can not guarantee the best results.
Prepare large baking trays lined with baking paper and set aside.
In a medium bowl mix flour and butter until you get crumbly consistency.
Add egg yolks, marzipan, confectioners' sugar and almond extract and mix together until you get a unified dough.
Wrap cookie dough in a cling film and place in a fridge for at least 1 hour.
After 1 hour, sprinkle a little bit of flour on a working surface. Divide cookie dough into 4 portions and roll each portion 4mm thin (0.16 inch).
Using cookie cutters, cut out different shapes and place them on the prepared baking sheets.
Chill prepared cookies in the fridge for 20 minutes.
When you are ready to bake, preheat an oven to 180C (356F).
Bake cookies for 12-15 minutes until golden on edges.
When cookies are ready remove them from the oven and place cookies on a cooling rack.
