Description

The best recipe for Millionaire's caramel gingerbread. Layer of honey gingerbread, spiced caramel, white chocolate and gingerbreads. You need to try this delish Christmas treat!

Ingredients
    Gingerbread layer
  • 1/2 portion gingerbread (dough, from my recipe http://kitchenbyannak.com/pierniczki-polish-gingerbread-cookies/)
  • Caramel layer
  • 150 ml double cream
  • 397 g condensed milk (one can)
  • 100 g brown sugar (soft)
  • 150 g butter
  • 1 tbsp cinnamon (powder)
  • 1 tsp cardamom (powder)
  • 1/2 tsp ginger (powder)
  • 1/2 tsp salt (table)
  • Chocolate layer
  • 300 g chocolate (white, chopped)
  • 100 ml double cream
Instructions
    Making gingerbread layer
  1. Prepare square baking tray. I used baking tray 20 x 20 cm. Line it with baking paper and set aside.

  2. Make gingerbread dough, (follow the recipe http://kitchenbyannak.com/pierniczki-polish-gingerbread-cookies/).

  3. Cut 1/3 of the dough and use it to make gingerbreads to add on top.

  4. Use the 2/3 of gingerbread dough and press it on the bottom of the cake tin.

  5. Preheat your oven to 160°C (fan) and bake the gingerbread base for about 20 minutes. Bake the decorative gingerbreads for about 11 minutes.

  6. Making caramel
  7. Add all the ingredients into a medium size pot and cook  on a medium flame. Stir constantly making sure that you reach edges of the pot as well.

  8. It will take about 15- 20 min for caramel to thicken. If you are using a sugar thermometer, you should be aiming for a soft ball stage of 112C - 115C. Please be aware that caramel is VERY hot and under no condition you should taste it while it is hot! It needs a lot of time to cool down.

  9. When caramel is ready, let it cool in the pot and after about 30 min pour it over the gingerbread base. Spread with spatula if necessary. Let it cool in a room temperature and transfer to the fridge.

  10. Making chocolate layer
  11. Add chopped chocolate and double cream into a heat-proof bowl.

  12. Place the bowl over a pot with boiling water and let chocolate melt.

  13. Remove the bowl from the heat and stir until you get a smooth mixture.

  14. When chocolate is ready, pour it over cooled caramel and spread all over. Add a couple of gingerbreads on top. Let it cool in room temperature and transfer the tin to the fridge for at least 5 hours or overnight.

  15. Cut Millionaire's gingerbread as you wish and store it in an air-tight container in the fridge for up to a week. You can also freeze it for up to 3 months.
