Crumbly and buttery shortbread cookies topped with thick homemade salted caramel and milk chocolate and chopped Twix bars - this is my version of easy Twix cookies.
Right, sorry guys, I just could not resist another cookie recipe. I am a sucker for a good cookie and was in a mood for a buttery cookies with caramel and chocolate and this is how my new recipe was born.
Making these Twix cookies was very easy and fun. I loved the fact that I could just make all the parts of the cookies beforehand to match my busy schedule and just put them together when I had time. No pressure or stress.
I am pretty sure majority of people had a Twix bar in their lives. I know for a fact that I had a lot of Twix bars and I can even say too many :) I like Twix bars so much that decided to make my own. Homemade Twix cookies are actually better as they are made with simple ingredients.
Shortbread layer
Mix sugar, flour and butter until just combined. Do not overmix. Shae cookie dough into a small log, wrap it in a cling film and place it in a fridge for at least 3 hour or ideally overnight. When you are ready to bake, preheat your oven to 170C fan (338F). Slice cookies, place them on baking sheets and bake for about 14 minutes until golden. When ready, let them cool down completely before adding caramel.
Salted caramel layer
I used my recipe for homemade salted caramel. Thick, smooth and beautifully golden salted caramel that goes on top of a shortbread. I would recommend making gooey and thick caramel. It means cooking caramel to a higher temperature. If you click on the above link, it will take you to my recipe for salted caramel with all the tips. You will need a sugar thermometer to make caramel. Wait for caramel to cool down completely and then spread it on the shortbread base.
Chocolate layer
This is an easy one. Just melt chocolate over a water bath and let it cool down. Chocolate should be thick just enough to cover the caramel. You can add chopped Twix bars on top if you wish. You can use any kind of chocolate you like- dark, milk, white, ruby. Whatever you fancy.
The homemade Twix cookies taste phenomenal. The shortbread layer is crunchy and sandy and melts in your mouth. Thick and gooey salted caramel is soft and incredibly satisfying to bite into. Milk chocolate on top of the cookie brings whole cookie together and gives silky chocolatey finish. Chopped Twix bar is optional. I have added it for extra crunch.
Store cookies at room temperature in an-air tight container for up to a week. You can freeze these cookies as well if you wish. Cookies can be frozen for up to 3 months.

In a medium bowl add flour, powdered sugar and cold butter and mix until all the ingredients come together. Do not overmix.
Shape the cookie dough into a sausage shape and wrap it in a cling film.
Place it in a fridge for at least 2 hours. Ideally overnight.
While the cookie dough is chilling, make salted caramel.

Let the caramel cool down completely.
When you are ready to bake, preheat your oven to 170C° fan (338F).
Prepare 2 baking sheets lined with baking paper.
Cut cookie dough into 0.5 cm thick slices and arrange them on baking sheets.
Bake cookies for about 14 min until golden.
Let the cookies cool down completely and then add a layer of salted caramel.
Then add melted chocolate on top and chopped Twix bars.
