Description

These no-bake salted caramel Ritz cookies are easy no-bake sweet treat They are fun to make and combine the best sweet and salty flavour combination.

Ingredients
  • 1 pack crackers (small, salted, I used Ritz crackers)
  • 1 portion caramel (from my recipe https://kitchenbyannak.com/recipe/homemade-salted-caramel-sauce/)
  • 300 g chocolate (semi-dark)
  • 10 g coconut oil (1 tablespoon, or any other flavourless oil)
  • sprinkles (of your choice, optional)

  2. If you decide to make your own caramel, I can recommend you the recipe I used https://kitchenbyannak.com/recipe/homemade-salted-caramel-sauce/. Just make sure you read post as well as it includes all the tips.

  3. Assembling cookies
  4. Take one cracker, add a teaspoon of thick caramel on top and place second cracker on caramel. 

  5. Press gently making sure that caramel does not ooze on the sides. 

  6. Repeat the process until you run of crackers. Placed sandwiched crackers on the side.

  7. Melt chocolate over a water bath and add coconut oil. Stir until fully combined.

  8. When chocolate is ready, dip each sandwiched crackers in chocolate. I used a fork for this.

     

  9. Place it on a baking sheet lined with baking paper. Repeat the process with the rest of the crackers.

  10. Add sprinkles on top.

  11. Let the cookies set for at least 3 hours.
