Are you looking for a quick and easy no-bake sweet treat, look no further. These no-bake salted caramel Ritz cookies are a wonderful option. They are fun to make and combine the best sweet and salty flavour combination. These cookies are perfect to make with kids.

What are Ritz crackers? They are small salty and delicious snacks that are very addictive. Every time I open a pack, I have to finish it. No doubt. One day when I was hoovering these little salty sunshines I though why not add caramel and chocolate and make a cookie. So I put my thought into action and it worked out great.

How to make no-bake salted caramel Ritz cookies

These cookies are very easy to make. The only think you need to do it to buy crackers, add salted caramel in the middle. Put second cracker on top. Then melt chocolate and coconut oil and dip the cracker caramel sandwich in chocolate. Place it on a parchment paper. You can add sprinkles on top if you wish to enhance the colour scheme.

TIPS:

  1. You can use any small salted crackers that are available in your area. Just make sure you do not use cheese, bacon or onion flavoured crackers. That would be fun 🙂
  2. For this recipe I used my homemade salted caramel sauce. It is thick and gooey and will not ooze outside crackers. Making homemade caramel is actually easy and I would encourage you to give it a go. If you want you can use store-bought caramel just make sure it is thick enough.
  3. When melting chocolate, I would recommend using a water bath and over a small heat. It will allow chocolate to melt without burning it. If you heat up chocolate too much it will bloom and you will notice white spots on your cookies. Bloomed chocolate is safe to eat, it just does not look as it should. Also make sure that you are using a good quality chocolate and that it is not out of date. Old chocolate and low quality chocolate will bloom as well.
  4. Sprinkles are optional. I think it is nice to add a little bit of colour.
  5. After dipping crackers in chocolate place them on parchment paper. It will help to achieve a nice chocolate covered bottoms and will prevent sticking.

These easy no-bake cookies taste fantastic. They are perfect for everybody who loves sweet and salty treats. Salty and crunchy crackers filled with gooey and creamy salted caramel then dipped in semi-sweet chocolate. The taste is fantastic and irresistible. Colourful sprinkles add colour an extra crunch.

How to store no-bake salted caramel Ritz cookies

You can store salted caramel Ritz crackers in a fridge for up to 10 days. I would recommend storing them in an air-tight container. You can also freeze them for up to 6 months. I have done it and had no issues. Still after all this time they taste wonderful. In order to defrost these chocolate treats, just take them out of the freezer and leave them at room temperature for at least 40 minutes.

Making caramel

  1. Read the post above for all the tips and storage information.

  2. If you decide to make your own caramel, I can recommend you the recipe I used https://kitchenbyannak.com/recipe/homemade-salted-caramel-sauce/. Just make sure you read post as well as it includes all the tips.

Assembling cookies

  1. Take one cracker, add a teaspoon of thick caramel on top and place second cracker on caramel. 

  2. Press gently making sure that caramel does not ooze on the sides. 

  3. Repeat the process until you run of crackers. Placed sandwiched crackers on the side.

  4. Melt chocolate over a water bath and add coconut oil. Stir until fully combined.

  5. When chocolate is ready, dip each sandwiched crackers in chocolate. I used a fork for this.

     

  6. Place it on a baking sheet lined with baking paper. Repeat the process with the rest of the crackers.

  7. Add sprinkles on top.

  8. Let the cookies set for at least 3 hours.
