OK, easy chicken recipes saga continues on my blog. I think right now I am in my lazy dinner zone and it does not look like I am going to stop any time soon. So, this time I am sharing a very easy and effortless, lazy dinner recipe for this delicious sriracha and tomato baked chicken drumsticks with Mediterranean chickpeas. My go to recipe if I need to make a delicious dinner and have very little time.
My recipe, yes it is very quick, BUT it requires planning ahead - for best results you need to leave the chicken to marinate for few hours, ideally overnight. It seems like it is a lot of work, but actually it saves time, as you may prepare the dish the day before and then it can be made in under one hour. Just bake chicken in the oven for 45 minutes and it is done.
TIPS:
If you have not tried sriracha sauce before, I can highly recommend to buy a bottle of this wonderful sauce. It is perfect for cooking, dipping or even baking on some occasions.
You make ask, what is sriracha sauce? Well it is a hot sauce or a chili sauce made of chili peppers, distilled vinegar, pickled garlic, salt and sugar. It is not too hot, but it has a kick and a sour savoury aftertaste. It originates from China, but the first bottle of this condiment was officially made in Thailand in 1940s in the town of Si Racha.
These baked chicken drumsticks taste fantastic. The marinade is hot and sweet and perfectly balanced by complexity of Mediterranean chickpeas. As the meat cooks, the chicken fat and marinade drips on the layer of nutty seasoned chickpeas and blends the whole dish together.
Chicken drumsticks are perfectly cooked leaving the meat tender and juicy. Falling of the bone.
If you are on a low-carb diet you can have these chicken drumsticks on its own or you can serve it with these low-carb side dishes : hasselback butternut squash with chorizo, butternut squash with feta and tomato mousse. Or you can enjoy all the carbs in these delicious side dishes: crushed potatoes with dill and garlic or potato bake with sour cream cheese and garlic.

A very easy one pot chicken recipe. Chicken drumsticks marinated in a beautiful and flavourful spicy and tomatoey marinade and Mediterranean chickpeas.
Place chicken drumsticks in a deep bowl.
Add sriracha, tomato puree, olive oil and parsley and rub everything together, making sure that every drumstick is covered in marinade.
Cover the bowl with a cling film and place it in a fridge for at least 2 hours or even better overnight.
In a deep baking dish, add chickpeas, olive oil, butter, spices and stir well.
When you are ready to make the dish, preheat your oven to 180C fan.
Arrange chicken drumsticks on seasoned chickpeas, add cherry tomatoes on top and bake the dish for about 45 minutes. Cover chicken drumsticks tightly with a piece of kitchen foil and bake for 25 minutes. Then take kitchen foil off and bake for another 20 minutes.
Serve hot with your favourite salad or another side dish.
