Nutty, creamy and not too sweet - toasted walnuts buttercream frosting tastes wonderful. You need only 4 ingredients to make it!

This is one of the flavours of my childhood and it is heavenly!

Toasted walnuts buttercream frosting , this is what I am presenting to you today and I am very grateful that my Mom let me publish her recipe so you can enjoy it as well. We always had walnut trees in our garden since I can remember. Our mum was very creative and used walnuts in a lot of dishes, baked goods, drinks or homemade treatments. Even now, my mum is my personal walnut dealer and every few months I can enjoy a delivery of few kilograms of walnuts from my mum's garden. Thank you Mum!

How to make toasted walnuts buttercream frosting?

  1. Taste your walnuts! Make sure walnuts are fresh. Stale walnuts will ruin your buttercream.
  2. Toast your walnuts - toasting nuts will release a beautiful aroma and add more flavour.
  3. Use a blender to grind your nuts. Aim for a 'powdery' consistency but do not over process your nuts as they will turn into a paste.
  4. Use a room temperature butter. Beat it until soft, pale and fluffy. Set aside.
  5. Cook milk and sugar and bring it to boil and add nuts. Keep stirring and the mixture should thicken. Let the mixture to cool down completely before adding butter!
  6. Store buttercream frosting in a fridge for up to a week or in a freezer for up to 3 months.
  7. This recipe makes about 400 g of frosting.

What does Toasted walnuts buttercream frosting taste like?

Toasted walnut buttercream is loaded with walnuts as it is based on real walnuts cooked in milk. Nothing artificial just real and natural ingredients. I think this is the reason why it tastes so decadent and it is not overly sweet!

This buttercream is very versatile and can be used as fillings for cookies, cupcakes, cakes, whatever you wish. I have used toasted walnut buttercream in my walnut, whisky and fig macarons, I will be sharing them on my blog soon.

Nutty, creamy and not too sweet - toasted walnut buttercream

Ingredients
  • 150 g walnuts (toasted, blended into 'powder')
  • 125 ml milk
  • 100 g sugar (white, granulated)
  • 250 g butter (salted, room temperature, if you are using unsalted butter, please add 1/4 tsp of table salt)
Instructions
  1. Beat butter until soft, fluffy and pale.

  2. Toast walnuts on a hot dry pan. Mix often so nuts do not burn. Let nuts to cool down.

  3. Place nuts in a blender of a food processor and grind them into a powder. Do not overmix as nuts will turn into a paste. Set aside.

  4. In a medium pot add milk and sugar, mix and bring to boil.

  5. Add nuts to milk mixture and mix well, keep stirring for about 5 min until the mixture starts to thicken.

  6. Now, let the mixture cool down completely before you add it to the butter.

  7. When nut mixture is completely cold, start adding it to the beaten butter, a tablespoon at a time.

  8. Store in the fridge up to a week.
