HOW TO MAKE FLUFFY RICOTTA PANCAKES

Making these easy breakfast idea is insanely easy.

  • First you need to separate egg whites from egg yolks.
  • Add egg yolks to a small bowl together with the rest of the ingredients.
  • Beat egg whites until stiff peaks.
  • Gently fold in egg whites to the egg yolk mixture.
  • Add a couple of tablespoon of batter on a hot pan and fry it couple of minutes each side.

TIPS:

  • These pancakes taste the best when they are hot.
  • When you are whisking egg whites, make sure that a bowl and whisks are free from moisture and grease. Egg whites will not whisk properly if there is a slightest amount of these two.

  • For all heat lovers, I recommend adding chili flakes, hot paprika, cayenne or a hot sauce, for example sriracha.
  • Serve pancakes with cured fish, for example salmon or mackerel.
  • I love eating these pancakes with fried egg and crispy bacon, so good!

SWEET SERVING SUGGESTIONS:

  • Adding a teaspoon of sugar to the batter will make these pancakes great for people with sweet tooth
  • Feel free to add cinnamon, nutmeg or cardamom.
  • Personally I love adding gingerbread spice to my pancakes during the Winter season.

Fluffy ricotta pancakes

You need to try these amazingly delicious light and fluffy ricotta pancakes. You can flavor them any way you want. With herbs, spices, chocolate chips etc. These ricotta pancakes are packed with protein and are great to make for lunch or breakfast.

Instructions

  1. Please read recipe post as well. It includes storage direction and other useful information. 

    I always recommend using a kitchen scale to weigh ingredients as it helps to achieve the best results. The US measurements in cups are the estimate and I can not guarantee the best results.

  2. Prepare a large pan and add oil. Set aside.

  3. Separate egg whites from egg yolks.

  4. In a medium bowl mix together ricotta cheese, milk, flour, salt, egg yolks, baking powder and herbs. Leave out herbs if you want plain pancakes.

  5. In a separate bowl whisk egg whites until you get stiff peaks. make sure your bowl and whisk if free from any moisture and grease.

  6. Gently fold in egg whites into the mixture. Do it slowly so you do not deflate the egg whites.

  7. Heat up the pan and when oil is hot, spoon the pancake batter on the pan. Cook for about 2 minutes each side until golden.

  8. Serve pancakes with fried egg and smoked salmon. (optional)
