How can you keep your carnivore man happy? Here is the answer – you can incorporate meat products in anything you can. This is what I have done and this is how this chorizo soft pretzel bread has been born.

How to make chorizo soft pretzel bread

The whole process of making this bread is a little bit time consuming, but the effort will pay off.

First, I make chorizo crumbs. I use quite dense chorizo sausage, not the soft one. I fry chorizo until done. Save the chorizo oil and grind chorizo into a food processor until I get crumbs.

Then I follow the standard bread baking process. I activate yeast in warm ( not hot!) liquid.

Please remember that you can kill yeast if you add it to a very warm liquid. Also, please check the expiry day of your yeast to avoid baking a rock!

Next I knead the dough until I get a smooth consistency. The colour of the dough will be orange/red due to adding chorizo crumbs and chorizo oil. Next step is to wait for the dough to proof in a warm place.

While I am waiting for the dough to proof, I am preparing the soda bath in which I will boil bread in, before baking. I always make sure that I have all utensils ready and I am prepared as will need to act fast.

When my bread dough is ready, I shape it, cook it in boiling water for few minutes and after that I bake bread for about 30 min. Please read the recipe carefully and make sure you understand the process.

This bread is exquisite! The crumb is very chewy, pillowy and soft but the exterior is crunchy with an extra layer of chorizo crumbs on top. The flavour is mild with a slight spicy kick from chorizo.

Instructions

  1. In a medium bowl, add milk, water, sugar and yeast, stir well and put aside for about 10 minutes until the mixture is foamy.

  2. Peel chorizo an cut it into small cubes.

  3. Heat up the pan and add chorizo, fry chorizo for about 10 min until fat melts and chorizo pieces become brown.

  4. Pour the chorizo oil into a small bowl (I got 50 ml of chorizo oil), set aside.

  5. Place fried chorizo into a food processor and grind it until it turns into crumbs consistency.

  6. In a large bowl add flour, salt, chorizo crumbs ( save a tablespoon of chorizo to sprinkle on top) and yeast mixture.

  7. Knead the dough for about 10 minutes.

  8. After 10 minutes, add chorizo oil and keep kneading the dough  for another 10 minutes,

  9. You are aiming for a springy, smooth dough that should not be sticky or too dry.

  10. When the dough is ready, cover the bowl with cling film and kitchen towel and set aside in a warm place for about an hour and 30 min. The dough should double in size.

  11. When you notice that dough may be ready, preheat an oven to 200C Fan.

  12. Boil water in a wide big pot.

  13. Prepare medium baking sheet lined with silicone mat or baking paper, spread some oil on it. Set aside.

  14. While water boils, move the dough on a working surface, flatten it to remove all the gases and shape it into a loaf. I shaped my dough into a long loaf but you can shape it any way you like. Just make sure that you seal the bottom well so the water does not get inside.

  15. When water is boiling, stir in baking soda.

  16. Slowly place dough into the water bath and let it boil for about 40 seconds each side.

  17. Using 2 slotted spoons or other flat utensils remove the dough from water bath and place it on a prepared baking sheet.

  18. Sprinkle the remaining chorizo crumb on top and bake the dough for about 30 minutes.

  19. When your bread is nearly ready, melt the butter.

  20. Take the bread out from the oven, brush it with melted butter and immediately move it on cooling rack. Let your bread to cool down completely before slicing.
