Juicy and sweet prawns with harissa and Prosciutto fried in brown butter – Heaven!

Do you often avoid making an appetiser for your dinner party? Do you think that it is too complicated and time consuming/ Yes, I was thinking the same until I came up with this amazing recipe for a delicious appetizer – prawns with harissa and Prosciutto. I can assure that this simple and flavourful dish will please all seafood lovers.

How to make prawns with harissa and Prosciutto

This recipe is quite straightforward and involves two main steps.

First step is to turn Prosciutto ham into crunchy crumbs. In order to do it, you need to roast it in your oven until it darkens in colour and becomes crunchy. It does not take long but please do not leave if roasting for too long as it burns easily. After your ham is roasted you can just crush it in your hands ( after it cools down). Another option would be placing ham in a food processor and urn into crumbs. If you are using food processor, please do not over process it and turn it into a powder.

Second step involves frying harissa marinated prawns in brown butter. Nothing complicated here. I want to mention that I would advise using a large pan for this step. Using a large pan is important because kebab sticks have to fit in your pan so prawns can cook properly.

The combination of sweet and soft prawns combined with aromatic harissa spice, nutty brown butter and salty Prosciutto crumbs is divine. All flavours complement each other very well. I love serving this dish on a fresh rocket salad for extra freshness and peppery flavour.

Instructions

  1. Place Prosciutto on a baking tray lined with baking paper and roast in an oven until crispy. Remove from the oven, let it cool down and crumble it. Set it aside.

  2. In a small bowl add prawns, harissa and parsley. Mix and set aside until your Prosciutto crumb is ready.

  3. Arrange prawns on kekab sticks.

  4. Take a big pan, add butter and let them butter melt until it becomes brown.

  5. When butter is brown, place prawns on a large pan and fry them  on both sides for about 2 minutes.

  6. When the prawns are cooked, arrange prawn kebabs on rocket salad, sprinkle with Prosciutto crumbs and serve hot.
