These pumpkin cut out cookies are crispy and yummy. They are loaded with pumpkin pie flavour and are a wonderful treat to go with a cup of tea or coffee.

It has been a while since I posted a cookie recipe so I thought it is time to change it. I made this pumpkin cut out cookies many times in the past and people loved it. Why? These cookies are just simple, easy to eat and are bursting with pumpkin flavour. Nu fuss, heavy and messy fillings – just simplicity this time.
How to make pumpkin cut out cookies
Easy-peasy. Dry ingredients into a medium bowl and mix. Then add butter and pumpkin puree and mix all the ingredients until dough forms. Then flatten the dough, wrap it in a cling film and leave it in a fridge for at least 2 hours. When you are ready to bake, preheat your oven to 170C fan/ 338F. Roll cookie dough and cut out cookies using a cookie cutter of your choice. bake for about 10-12 until crispy of edges.
I have dipped these cookies in white chocolate and sprinkled some glitter, but of course this is optional. In my house this is not an option as I live with a white chocolate dictator. Whenever there is a a way to add white chocolate on a cookie, I have to do it. In fact white chocolate and caramel – but this is another story.
TIPS:
- If you are using homemade pumpkin puree, make sure you drain it well before adding to the mix. If your pumpkin puree is quite wet, drain it or cook it on a dry pan until water evaporates. You can of course use store-bought puree as well (unsweetened). If you use it wet puree you will have to add more flour.
- I have added a whole tablespoon of my homemade pumpkin pie spice but feel free to add less. My taste testers said that they enjoyed the vibrant flavour from the spices.
- If you are using a very small cookie cutter, I would limit baking time to 8-9 minutes.
- The texture of these cookies is quite crispy and reminds me of a biscuit.
- You can prepare cookie dough in advance and store it in a fridge for up to two days.
What do pumpkin cut out cookies taste like?
These simple pumpkin cookies are very tasty. They are great alternative to chunky and bulky cookies as we know it. It is a very simple treat that is packed with pumpkin flavour of homemade pumpkin puree and homemade pumpkin pie spice. The texture is quite crispy and therefore they are perfect for dunking in a cup of tea.
How to store pumpkin cut out cookies
You can store these cookies in a cookie jar or an air-tight container at room temperature for up to a week. These cookies freeze well and you can keep them in a freezer for up to six months.

Pumpkin cut out cookies
These pumpkin cookies are crispy and have biscuit like consistency. Dip cookies in white chocolate and you will get the best pumpkin cookie in front of you.
Ingredients

Add flour, pumpkin pie spice and sugar into a medium bowl, mix.

Add butter and pumpkin puree and mix together until all ingredients create dough.

Flatten the dough into a disc and wrap it in a cling film.

Chill in the fridge for at least 2 hours. Ideally overnight. You can also leave dough in the fridge for up to two days.

Preheat your oven to 170°C fan / 338F.

When you are ready to bake, prepare 2 large baking trays lined with baking paper and set aside.

Roll the cookie dough about 0.8 cm thick and cut out the cookies using any cookie cutter you wish.

Arrange cookies on the prepared baking sheets and bake them for about 11 - 12 min until crispy on the edges.

Transfer cookies on a cooling rack and let them cool completely.

Dip cookies in melted white chocolate.
