What do you do if you have a pack of soft caramels and apples in your house?

You make cookies! Well, this is what I did and came up with a great recipe for wonderful apple and soft caramels cookies. Baking is an activity that cures my soul. It it very satisfying to watch how simple ingredients come together and make the most scrumptious cookies. Whatever problem you have, baking these cookies will help to deal with all of them!

How to make apple and soft caramels cookies?

First you need to cut apple and caramels into small pieces and mix them in wit corn starch. This step will prevent apples and caramels from sinking on the bottom of your cookies.

Then the steps are pretty much fuss free. I cream butter with sugar, add egg and dry ingredients and mix my cookie dough well. Next I stir in apple and caramel pieces. Then scoop my cookie batter on baking tin and bake until golden. Important tip, please leave space between cookies as they will spread.

What do apple and soft caramels cookies taste like?

These cookies taste like Autumn. A generous amount of cinnamon blends with apple and caramel flavours beautifully. I added 1 tablespoon because in our house we really enjoy cinnamon aroma, especially in colder weather like today. It creates a cozy and warm sensation in your mouth that you wish never went away.

I really enjoyed the texture of these cookies: soft, pillowy with gooey pieces of melted caramels. These cookies have a cakey texture rather than a crispy one. Therefore these golden little treats are great for kids or people who can not eat crunchy foods because of braces etc.

How to store apple and soft caramels cookies?

I would recommend storing these cookie in an air tight container for up to four days, in a room temperature. You can also freeze them for up to 4 months if you wish.

The best part is that these cookies can be warmed up very easily. Just preheat your oven to 120 Fan, place cookie on a baking tin and bake for 3 min. This instruction is for cookies that have not been frozen. If you want to warm up frozen cookies you would need to keep cookies in the oven for a longer time, I would say 5-7 minutes.

Instructions

  1. Prepare two baking sheets, line them with baking paper and set aside.

  2. Preheat your oven to 175C° Fan.

  3. Chop caramels into medium pieces, set aside.

  4. Peel an apple and cut it into into small cubes.

  5. Place apple pieces, caramel and corn starch in a medium bowl and mix until apple and caramels are covered in corn starch. Set aside.

  6. Cream butter and sugar until fully incorporated.

  7. Add egg, vanilla, salt and cinnamon and mix well. Set aside

  8. In a separate bowl sift in flour, baking powder and baking soda - mix until just combined.

  9. Add apple and caramels and using a spoon just stir them in.

  10. Scoop the cookie dough on a baking sheet - I used a cookie scoop but you can use a normal spoon. The weight of my cookie portion was 50g.

  11. Cookies will spread so make sure you leave space between them.

  12. Bake cookies in a preheated oven for 13 - 14 min.

  13. When cookies are ready, remove them from the oven and let them cool down on baking sheets - cookies are soft when they are warm this is why it is better to leave them on baking sheets to cool down.

  14. Store in an air tight container in a fridge for up to 4 days of store in the freezer for up to 2 months.
