Crispy and light homemade chocolate cannoli shells filled with boozy Baileys and dark chocolate ricotta filling - yes, this is my new recipe for Baileys and chocolate Italian cannoli.
If you are planning a party and are looking for a great dessert that everybody will be talking about, you definitely need to add these little sweet treats on your list.

Briefly speaking Italian cannoli is a tube-shaped, deep-fried pastry that is filled with a smooth and sweet ricotta cheese filling. This wonderful Italian cannoli comes from Sicily.
Making cannoli consist of two main steps, which is preparing the shells and the filling.
MAKING CANNOLI FILLING:
Boozy Baileys and dark chocolate filling is pretty easy to prepare. You basically need three ingredients such as: ricotta cheese, Baileys liqueur and dark chocolate. That is it. The whole secret is in the proportions of the ingredients. I created this recipe for everybody who likes boozy desserts and I want to warn you guys, the filling is quite strong.

In a nutshell, this chocolate Italian dessert tastes very decadent and rich.
First, the cannoli shells.
The addition of cocoa powder in these crunchy and light cocoa cannoli shells adds bitterness and creates a solid base for the chocolatey filling. The consistency of the shells is so delicate, airy and abundant is tiny air pockets.
Next, the cannoli filling.
The filling is freakin' delicious! The consistency is smooth, creamy and irresistible. Chocolate and Baileys flavor shines through. Honestly, these Baileys and chocolate Italian cannoli are to die for!

Add some chocolate sprinkles on your cannoli and serve them at room temperature.
Unfilled cannoli can be store in a dry air-tight container for up to a month, at room temperature. I recommend storing filled cannoli in a fridge for up to 4 days. Bear in mind that cannoli shells will draw moisture from the filling and become soft overtime.
The shells can be frozen in a freezer-friendly bag up to 2 months.

To start, you need to drain ricotta cheese very well, then set it aside.
Place chopped chocolate into a heat-proof bowl and melt it over a water bath. When chocolate is melted, take the bowl away from the heat.
Let chocolate cool down for 2 minutes and start adding Baileys. Keep stirring.
Keep stirring until the chocolate and Baileys are fully combined and the mixture is smooth, thick and glossy.
Let the mixture cool down completely before adding it to ricotta cheese.
When the mixture is completely cold, gently fold in ricotta cheese. For this step, I would recommend using a spoon rather than a mixer.
Transfer the filling into a pipping bag with a piping nozzle.
Fill each cannoli with the filling.
Decorate each cannoli with chocolate sprinkle on the sides.
Empty cannoli shells can be stored in an air-tight container for up to a month, at room temperature.
I would recommend filling cannoli as close to serving time as possible.
Filled cannoli will become soggy after a day or so.
If you have any leftover filling, you can keep it in the fridge for up to a week and use it for other desserts.
This cannoli filling freezes well. You can freeze it in an-air tight container for up to 2 months.
