Baileys and chocolate Italian cannoli

Crispy and light homemade chocolate cannoli shells filled with boozy Baileys and dark chocolate ricotta filling – yes, this is my new recipe for Baileys and chocolate Italian cannoli.

Last year I was in a cannoli mode. I am not even kidding. I made trillions of cannoli shells and experimented with different cannoli flavours. Of course, I will be sharing them with you soon. For now, lets focus on these beauties.

What is an Italian cannoli?

Briefly speaking Italian cannoli is a tube-shaped, deep-fried pastry that is filled with a smooth and sweet ricotta cheese filling. This wonderful Italian cannoli comes from Sicily.

How does Baileys and chocolate Italian cannoli taste like?

In a nutshell, this dessert taste very decadent and rich.

First, the cannoli shells.

The addition of cocoa powder in these crunchy and light cocoa cannoli shells adds bitterness and creates a solid base for the chocolatey filling. I love the fact that I can prepare cannoli shells in advance and just store them for up to a month! No hassle, no stress and easy to put together when a delightful dessert is needed.

A good cannoli shell should not only be light and crispy, but it should also have millions of small air bubbles which burst with every bite. I hope that I do not have to mention that is should be deep -fried! Yeap, I have seen some recipes that recommended making cannoli shells in the oven. I mean, seriously? I highly recommend go the traditional route and deep-fry cannoli shells. It tastes sooo amazing!

Next, the cannoli filling.

Boozy Baileys and dark chocolate filling is pretty easy to prepare. You basically need three ingredients such as: ricotta cheese, Baileys liqueur and dark chocolate. That is it. The whole secret is in the proportions of the ingredients. I created this recipe for everybody who likes boozy desserts and I want to warn you guys, the filling is quite strong.

It is not only strong, it is also freakin’ addictive and delicious! The consistency is smooth, creamy and is abundant in chocolate flavour. Honestly, these Baileys and chocolate Italian cannoli are to die for!

My last advice would be to fill your cannoli shells as close to serving time as possible. Otherwise your cannoli shells will become soggy.

Homemade Italian cocoa cannoli shells

Baileys chocolate ricotta filling

  1. To start, you need to drain ricotta cheese very well, then set it aside.

  2. Place chopped chocolate into a heat-proof bowl and melt it over a water bath. When chocolate is melted, take the bowl away from the heat.

  3. Let chocolate cool down for 2 minutes and start adding Baileys. Keep stirring.

  4. Keep stirring until the chocolate and Baileys are fully combined and the mixture is smooth, thick and glossy.

  5. Let the mixture cool down completely before adding it to ricotta cheese.

  6. When the mixture is completely cold, gently fold in ricotta cheese. For this step, I would recommend using a spoon rather than a  mixer.

Assembling cannoli

  1. Transfer the filling into a pipping bag with a piping nozzle.

  2. Fill each cannoli with the filling.

  3. Decorate each cannoli with chocolate sprinkle on the sides.

Storage

  1. Empty cannoli shells can be stored in an air tight container for up to a month.

  2. I would recommend filling cannoli as close to serving time as possible.

  3. Filled cannoli will become soggy after a day or so.

  4. If you have any leftover filling, you can keep it in the fridge for up to a week and use it for other desserts.

  5. This cannoli filling freezes well. You can freeze it in an air tight container for up to 2 months.
