As Autumn is approaching fast I had to share my new recipe for the best baked apples stuffed with salted caramel cheesecake. But this is not all, the apples are topped with cinnamon and almond crumble, drizzled with homemade salted caramel and topped with homemade ice cream.
If you are craving an apple dessert but apple pie seems boring I can highly recommend to try this wonderful dessert. It has it all, soft apples, creamy cheesecake, smooth salted caramel and crunchy almond crumble. Wait, it also has a generous scoop of homemade Irish cream ice cream on top. Of course, feel free to use any ice cream you wish.
I have came up with this recipe as could not decide what to make for a dessert and thought, why not have it all! Try it and you will thank me later.

How to make baked apples stuffed with salted caramel cheesecake
This apple dessert is very easy to make, I promise. You need to make sure you make all the elements first:
- CARAMEL: I made salted caramel, but obviously you do not have to. You can use a store-bought. If you decide to make your own caramel, I can recommend you my recipe for homemade salted caramel. It is very easy to make, just make sure you follow the recipe precisely. Caramel should be at room temperature before you add it to the cheesecake mix.
- CRUMBLE: noting difficult here, just mix all the ingredient in a small bowl. Make sure you use cold butter.
- CHEESECAKE FILLING: mix all ingredients together and then stir in salted caramel sauce. This is it.
- ICE CREAM: I have used homemade ice cream, but feel free to use store-bought or omit it if you wish.

What does baked apple with cheesecake taste like?
This autumnal dessert tastes phenomenal. The apple is soft and tangy, baked to perfection. The cheesecake is smooth and loaded with salted caramel flavour. The cinnamon and almond crumble adds extra crunch and spice to the mix. All of this is drizzled with more salted caramel sauce, because you can not have enough of salted caramel, do you agree? A huge scoop of ice cream on top adds more creaminess and happiness as well.

How to serve and store baked apples
These apples taste the best when they are very warm, but not hot. After taking them from an oven, I would wait for about 10-15 minutes before serving. My family loves adding ice cream on warm apples. As ice cream melts, it creates an amazing sauce and makes this dessert irresistible.
In my opinion these baked apples stuffed with salted caramel cheesecake taste the best when they are served warm. If you need to store them, you can place them in an air-tight container for up to 2 days. In order to reheat the apples, place them for 15 minutes in a preheated oven at 100C (212F).

Baked apples stuffed with salted caramel cheesecake
Soft baked apples stuffed with salted caramel cheesecake, topped with cinnamon and almond crumble, drizzled with salted caramel and topped with homemade ice cream.

I always recommend using a kitchen scale to weigh ingredients as it helps to achieve the best results.

Prepare a medium baking tray or dish and line it with baking paper. Set aside.

Wash apples under hot water to get rid of any wax. Dry apples with paper towel.

Remove apple core and create a round cavity for cheesecake filling.

Add 1 tsp of caramel inside each apple (you may add more if you wish but remember to save caramel for cheesecake and drizzle).
Making crumble

Add all ingredients into small bowl and using your fingers mix ingredients until you get crumbs consistency.
Baking apples with caramel cheesecake

Preheat an oven to 150C fan. (302F).

Add cream cheese, cream, vanilla and egg into a medium bowl and mix together on low speed until just combined.

Add 4 or 5 tablespoons or salted caramel to cheesecake and swirl together.

Spoon the cheesecake filling inside each apple.

Place apples into the oven and bake them for about 30-40 min. Cheesecake will be set after this time so just watch if the apples are done to your liking. If you want to check if apples are done, remove the tray with apples from the oven and using a fork, check if apples are soft. If they are not, place apples back to the oven.

Remove the apples from the oven after 30 min (or more, depending if apples are done.

Add almond crumble on top and bake for about 8-10 minutes.
Serving apples

Remove apples from the oven, let them cool down a little bit.

Drizzle salted caramel and top and add a scoop of ice cream.
