How to make black forest brownie cupcakes
The whole process of making these wonderful cupcakes is effortless. I would start with making the forest fruit jam first. It needs time to cool down before we can mix it with whipped cream, sugar and mascarpone cheese. I also want to point out that you can adjust sweetness of your topping to your liking. We prefer more tart flavours this is why I did not add a lot of icing sugar to whipped cream and mascarpone.

Making brownie cupcakes is a smooth process as well. I just melted butter and chocolate and let it cool down before adding eggs and sugar. Then I have added dry ingredients and stirred in chopped Amarena cherries. This is it. Bake for about 20-25 min and brownie cupcakes are ready.

How to decorate Black forest brownie cupcakes
I will be honest, I am not the best at decorating cupcakes, cakes, cookies, etc, simply because I am very impatient. So instead using a traditional pipping technique I used a cookie scoop. Decorating was done in 3 minutes! I have added Amarena cheery on top of each cupcake and shaved some milk chocolate. The results are amazing. I am a big fan of rustic looking, homemade desserts with bold flavours.

What do black forest brownie cupcakes taste like?
The cupcakes are dark chocolate brownie cupcakes. They are dense and very chocolatey, studded with juicy Amarena cherries. I want to point out that they are NOT fluffy and light, with this amount of a melted chocolate, it is not possible 🙂 And as the name indicates, they are brownie cupcakes!

And the topping, oh God, gorgeous topping of mixed forest fruit. I used frozen – as I had a spare bag of frozen forest fruit in my freezer – but you can use fresh if you want. So, yes, forest fruit, mascarpone cheese, whipped cream and just tiny, I mean tiny bit of sugar. Let the sharpness of fruit shine here!!!

Black forest brownie cupcakes
Dense and chocolatey dark chocolate brownie cupcakes studded with Amarena cherries with light and fluffy mascarpone, whipped cream and forest fruit topping. Amarena cherry and shaved chocolate is the cherry on the cake.

Ingredients
Brownie cupcakes
Mascarpone black fruit topping
Instructions

Prepare cupcake baking tin and line it with cupcake liners, set aside.
Making fruit jam

Defrost your frozen fruit and drain it.
Add it to a medium pot together with sugar. Mix.

Cook it and stir from time to time until the fruit mixture starts to thicken and water evaporates.

It should take about 10-12 min. When it is ready, let it cool down completely and then place into a fridge.

If you are using fresh fruit, the cooking time can be slightly different.
Making brownie cupcakes

Preheat an oven to 160C fan (320F).

In a small pot melt butter and chocolate and once done, let it cool completely.

Add milk and eggs and stir well.

In a separate bowl mix cocoa, flour, baking powder and sugar.

Add chocolate and butter mixture to the flour and cocoa mixture and stir until you can not see any lumps of flour or cocoa.

Stir in chopped Amarena cherries.

Using a cookie scoop or a spoon, divide the mixture between the 12 cupcake liners.

Bake for about 22-25 min.

When ready, remove it from the baking tin and place it on a cooling rack so the cupcakes can cool down completely.
Making the topping

Add mascarpone cheese, powdered sugar and whipped cream into a large bowl.

Whip all ingredients together until light and stiff.

Stir in the black forest fruit jam.
Assembly

Decorate your cupcakes with the topping as you wish.

Add Amarena cherries on top of every cupcake.

Sprinkle shaved chocolate on top.
Serving suggestions

Store the cupcakes in the fridge for up to 3 days.Â
Bring the cupcakes to room temperature before serving.
