Decadent, rich and smooth chai and dulce de leche cheesecake with cranberries. This is what I call the ultimate Christmas dessert. I wanted to make something so over the top and indulgent that people will not forget it for a long time. Because how can you forget about this luxurious looking baked cheesecake loaded with warm chai spice blend, topped with light cranberry whipped cream and decorated with a generous amount of whisky infused candied cranberries. How to make chai and dulce de leche cheesecake with cranberries

Making this cheesecake is very easy but requires planning in advance.

  1. I would recommend making whisky infused candied cranberries first and store them in the fridge.
  2. Cranberry whipped cream can be made on the day when you want to serve your cheesecake, so it is as fresh as possible.
  3. The last but not least is the cheesecake itself. I recommend baking it a day or two in advance so it has time to set properly. The only thing you need to do is to mix mascarpone cheese, cream cheese and yoghurt and mix. Then add sugar and flour and eggs. Next goes dulce de leche and spices. Pour it to a baking tin and bake.

TIPS:

  • Do not forget to add a baking tin with water on the bottom of your oven. It will make your chai and dulce de leche cheesecake with cranberries creamy.
  • Cheesecake tastes the best when is baked low and slow. I mean at low temperature for longer. It still should have a slight wobble when you move it.
  • Tapping cheesecake filling before baking on a counter helps to remove air bubbles which will help to bake flat cheesecake and will also make your cheesecake creamy.
  • If you decide to use a different size of baking tin, make sure you adapt baking time accordingly.

The consistency is creamy, smooth an delicate. The cranberry whipped cream is light and velvety. Crunchy sugared cranberries add a little bit of texture to the mix.

How do I describe the flavor? It is delicate, with a mild sweetness from dulce de leche. Warm chai spice mix adds a beautiful aroma and compliments cheesecake filling. The cranberry toppings add tartness and freshness to the mix, making every bite an indulgent treat.

You can store this festive Christmas dessert in a fridge for up to a week. I serve cheesecake at room temperature as it allows flavors to fully develop.

When it comes to freezing, you can freeze just the cheesecake for up to 6 months. You can defrost it by placing it on a counter at room temperature and decorate it when needed. I have not frozen whole cheesecake with the toppings so can not comment on it.

Instructions

Making chai spice

  1. Please read recipe post as well. It includes storage direction and other useful information. 

    I always recommend using a kitchen scale to weigh ingredients as it helps to achieve the best results. The US measurements in cups are the estimate and I can not guarantee the best results.

  2. Mix all the spices in a small bowl and set aside until you need it.

Making cheesecake

  1. IMPORTANT: All ingredients have to be at room temperature.

  2. Prepare 18 cm  (7 inches) baking tin, line it with baking paper and set aside.

  3. In a medium bowl mix together mascarpone cheese, cream cheese and Greek yoghurt until smooth.

  4. Add flour and icing sugar and mix together.

  5. Now, add eggs and egg yolk and mix for 30 seconds.

  6. Now, we are no longer using a mixer, grab a flat spatula or a spoon and fold in dulce de leche and chai spice.

  7. Let the mixture sit for 10 minutes so the cheesecake filling can infuse with spices.

  8. Preheat an oven to 150C fan 9302F), place a  baking try filled with water on the bottom of the oven. This will create steam inside your oven and your cheesecake will bake smooth and creamy.

  9. Transfer the cheesecake mixture to your baking tray, hit it few times on the counter (it will help to get rid of air bubbles in cheesecake mixture).

  10. Bake in the oven for about 1h and 30 minutes. Cheesecakes are the best if they are baked longer at lower temperature. Please do not open the oven for the first 60 minutes.

  11. Cheesecake is ready when the sides are a little puffy but the middle is wobbly.

  12. Turn the oven off and let the cheesecake cool inside the oven for at least 2 hours.

  13. Take cheesecake out and let it cool down completely at room temperature. Next transfer it to a fridge for few hours, ideally overnight. It will help cheesecake to set properly.
