This is my new painless and incredible recipe for soft and crispy Hasselback potatoes with chorizo, cheese and bacon. The ultimate comfort food.

Now, I want to warn everybody who is on of sort of a diet – this recipe is not healthy and has million calories but it tastes ridiculously good! If you are looking for the ultimate comfort food for your dinner you need to check this recipe out.

How to make Hasselback potatoes with chorizo, cheese and bacon?

I am a big fan of straightforward recipes, something that everybody can make. Even a beginner. This dish is one of this kind.

First, you need to make sure all potatoes are similar size. It will help potatoes to cook evenly.

Second, it is important to slice potatoes as thinly as possible without cutting all the way through a potato. Placing potato between two chopsticks or skewers will help.

Third, brushing a generous amount of melted butter will help potatoes to roast beautifully.

Fourth, do not be shy on chorizo, cheese and pancetta. I went for spicy chorizo and Jack cheese but you can add any you wish. I also added some random tomatoes on top, just pretend that this dish is healthy 🙂

This dish is utterly delicious. Soft and fluffy inside and crispy potatoes layered with slices of spicy chorizo, oozing cheese and topped with crunchy Pancetta – just perfection. The salty/spicy flavour combo with a hint of sweetness from tomatoes, this dish will definitely hit the spot.

Hasselback potatoes with chorizo, cheese and bacon

Soft and crispy hasselback potatoes stuffed with chorizo, cheese an bacon. The ultimate comfort food.

Instructions

  1. Wash your potatoes and dry them with paper towel. Set aside.

  2. In a small pot melt butter, set aside.

  3. Preheat an oven to 200C° Fan.

  4. Place 2 wooden spoons or kebab sticks on a chopping board.

  5. Place potato in between and slice thinly until the knife reaches the wooden spoons. This trick will help to cut potatoes nicely and  thin without cutting all the way through a potato.

  6. Arrange your potatoes in a baking dish, brush butter on top and between the slices and place potatoes in an oven.

  7. Every 10 minutes or so, remove the potatoes from the oven and brush more butter on the potatoes.

  8. Bake potatoes for about 1 hour, until cooked and crispy on the edges.

  9. When potatoes are nearly done (after about 40 min), remove the dish from the oven and arrange slices of chorizo and cheese between potato slices.

  10. Add cubed Pancetta and some tomatoes (optional) between potatoes and on top and place the dish back to the oven for another 15-20 min until Pancetta is golden brown and chorizo is crispy on the edges.

  11. When potatoes are ready, remove the dish from the oven and serve with a salad.

Tips:

  1. The trick with wooden spoons or kebab sticks is very helpful, it will really make cutting easier.
