As we are approaching this magic Christmas time, the craziness over Christmas cookies gets wilder. I have to admit I joined this craziness, simply because I love cookies. I am sure you can see it looking at my recent posts :).
So this time, I am sharing my version of Lebkuchen – German gingerbread cookies. This recipe is easy and perfect for Christmas!
How to make Lebkuchen German honey gingerbread cookies
German Lebkuchen cookies are similar to Polish gingerbread cookies, but Polish gingerbread cookies do not have ground almonds and ratios of ingredients are different.
Another very easy and fast recipe for gingerbread cookies. Here is the recipe in a nutshell.
- Melt butter and honey in a pot and bring to boil. Let it cool down before adding to the rest of the ingredients.
- In a separate bowl add dry ingredients and mix.
- Mix everything until you get a unified dough. Dough will be oily but this is ok.
- Sprinkle some flour on the working space and roll the dough. The thickness should be around 0.7cm. Not too thick and not too thin.
- Using a cookie cutter of your choice cut out cookies and placed them on baking sheets.
- Bake cookies for about 10 minutes at 160C (320F).
- Decorate cookie with melted chocolate, icing or sprinkles.
What do Lebkuchen German honey gingerbread cookies taste like?
These festive cookies do not only look beautiful but the also taste phenomenal. The texture is nice and soft. Cookie are sturdy enough to decorate or use as decorations for Christmas tree. The flavour is fantastic. Aromatic gingerbread spice, sweet ground almonds, earthy cocoa powder and sweet honey blend together into a unique and irresistible flavour.
How to store Lebkuchen German honey gingerbread cookies
Store lebkuchen at room temperature in a cookie box or a cookie jar for up to 2 weeks. These cookies freeze great. I would recommend freezing them in a zip lock bag for up to 6 months. In order to defrost cookies, take them out of the freezer and let the sit at room temperature for about 40 minutes.

Lebkuchen German honey gingerbread cookies
Soft and flavourful German gingerbread made with real honey and almonds. Drizzled with chocolate.

Prepare baking sheets lined with baking paper and set aside.

Preheat your oven to 160°C fan (320F).

Place butter and honey in a medium pot and bring to boil, stir and set aside to cool down.

In a medium bowl sieve flour, cocoa, salt, baking powder, almonds and gingerbread spice. Mix.

Make sure honey is cold enough before adding it to the mix.

Slowly start adding the honey mixture to the flour and mix the ingredients.

The dough will be oily, but this is ok.

Transfer the dough on a working space and roll the dough 1 cm thick. Sprinkle flour if necessary.

Using a cookie cutter or a glass, cut out cookies and place them on prepared baking sheets.

Bake cookies for about 8-10 min until golden on the edges.

When cookies are ready, let them rest for about 5 minutes on baking sheets and then transfer cookies on a cooling rack.

Drizzle cookies with melted chocolate or icing and add sprinkles of your choice.
