My new recipe for lemon and garlic baked chicken drumsticks is healthy, low-carb, gluten-free and incredibly effortless.

Chicken drumsticks have become my favourite part of chicken to cook with right now. Why? Because the brown meat has so much more flavour than chicken breast and it is so tender and juicy.

This dish is great for beginners as does not require any cooking skills, just some common sense - that's it. So if you want to prepare a special meal but you are too scared you will mess it up, lemon and garlic baked chicken drumsticks are right for you. Easy, quick and mouthwatering.

How to make lemon and garlic baked chicken drumsticks

First you need to make marinade. Add olive oil, lemon, minced garlic and spices in a small bowl and leave it aside for about 10 minutes. This step will help all flavours to blend nicely. Then add marinade to the chicken drumsticks and mix well. make sure that every drumstick is covered in marinade. Lots and lots of minced garlic and lemon juice and few basic spices like black pepper and onion and olive oil, this simple marinade will tenderize chicken drumsticks and turn it into a mouthwatering dinner for the whole family. The only thing left is to bake chicken in a preheated oven for about 50 minutes. Easy.

TIPS:

  1. Use fresh garlic only. Powdered garlic will not give the same results.
  2. Use an oven-proof dish with lid. If you do not have one. You can use an oven-proof dish or a baking tray and cover chicken tightly with foil.

These drumsticks taste wonderful, the lemon and garlic flavour shines through. The meat is tender, juicy and is falling off the bone.

How to serve this dish

You can serve this dish with pretty much anything, but I love serving chicken drumsticks with these potato sides: potato bake with sour cream cheese and garlic or crushed potatoes with dill and garlic. If you want to stick to a low-carb option, I would suggest hasselback butternut squash with chorizo.

A very easy chicken recipe - chicken drumsticks marinated in lemon and garlic and baked to perfection

Ingredients
  • 1 kg chicken drumsticks (I got 10 drumsticks in 1 kg ( skinless))
  • 70 ml olive oil
  • 1 lemon (large, washed)
  • 10 garlic cloves (peeled and minced)
  • 1 tbsp onion (powder)
  • 1 tbsp parsley (dried)
  • 1 tbsp salt (table)
  • 1 tbsp black pepper (powder)
  • 2 onions (large, peeled, cut into quarters)
  • 2 carrots (peeled and cut into chunks)
  • 120 ml water
Instructions
  1. I would advise you to marinate chicken at least for 8 hours or overnight for the best results. If you do not have time to do it, it is ok, chicken will still taste delicious.

  2. Dry chicken drumsticks with paper towel.

  3. Place chicken drumsticks in a large bowl.

  4. Add olive oil, lemon juice, garlic and spices into a small bowl and mix well, set aside for 10 minutes.

  5. Next pour the mixture the drumsticks and massage it very well on the meat, making sure every drumsticks is covered in marinade.

  6. Cover the bowl with a cling film and then place the bowl in a fridge for at least 8 hours or overnight.

  7. When you are ready to bake chicken, preheat an oven to 180C° fan.

  8. Prepare an oven-proof dish with lid.

  9. Add quarters of onion and pieces of carrot on the bottom and pour over water.

  10. Place drumsticks on top.

  11. Cover the dish with the lid and bake in the oven for 50 minutes.

  12. Serve hot.
