Today I would like to introduce you to a Christmassy version of the classic Millionaire’s caramel shortbread – Millionaire’s caramel gingerbread. I thought it would be a great idea to combine these two classics together and in fact it was!
How to make Millionaire’s caramel gingerbread
First, I made gingerbread layer using my recipe for Pierniczki -Polish gingerbread cookies. You can make gingerbread layer in advance if you want. You can even make it two weeks ahead and store it in a room temperature. I would recommend using my recipe for homemade gingerbread spice. It tastes much better than the one you get in a shop.
Next, I made the spiced caramel layer. This step is quite straightforward but it is important to remember few things. It will take around 20 minutes for the mixture to thicken and you have to stir it constantly, so it does not burn. It is also necessary to know that caramel should reach the so called ‘soft ball stage’ (115C) for it to set properly and get this nice chewy consistency. I would recommend using a sugar thermometer if possible.
The chocolate layer – this is an easy one. Just melt white chocolate and double cream over a water bath. I always add cream to chocolate for Millionaire’s bars as it makes the chocolate layer soft and easy to cut and bite.
When it comes to decorating, I love adding extra gingerbreads on top to make the bars pretty and thicker. Of course, you can decorate your bars any way you wish.
The most difficult time in the whole process of making Millionaire’s caramel gingerbread is waiting, but I can tell you that the wait is worth it as these bars are wonderful and taste irresistible!

Millionaire’s caramel gingerbread

Making gingerbread layer

Prepare square baking tray. I used baking tray 20 x 20 cm. Line it with baking paper and set aside.

Make gingerbread dough, (follow the recipe http://kitchenbyannak.com/pierniczki-polish-gingerbread-cookies/).

Cut 1/3 of the dough and use it to make gingerbreads to add on top.

Use the 2/3 of gingerbread dough and press it on the bottom of the cake tin.

Preheat your oven to 160°C (fan) and bake the gingerbread base for about 20 minutes. Bake the decorative gingerbreads for about 11 minutes.
Making caramel

Add all the ingredients into a medium size pot and cook on a medium flame. Stir constantly making sure that you reach edges of the pot as well.

It will take about 15- 20 min for caramel to thicken. If you are using a sugar thermometer, you should be aiming for a soft ball stage of 112C - 115C. Please be aware that caramel is VERY hot and under no condition you should taste it while it is hot! It needs a lot of time to cool down.

When caramel is ready, let it cool in the pot and after about 30 min pour it over the gingerbread base. Spread with spatula if necessary. Let it cool in a room temperature and transfer to the fridge.
Making chocolate layer

Add chopped chocolate and double cream into a heat-proof bowl.

Place the bowl over a pot with boiling water and let chocolate melt.

Remove the bowl from the heat and stir until you get a smooth mixture.

When chocolate is ready, pour it over cooled caramel and spread all over. Add a couple of gingerbreads on top. Let it cool in room temperature and transfer the tin to the fridge for at least 5 hours or overnight.

Cut Millionaire's gingerbread as you wish and store it in an air-tight container in the fridge for up to a week. You can also freeze it for up to 3 months.
