It has been a while since I shared a seafood dish on my blog, so here is my new recipe for the best salmon and prawns in mascarpone and dill sauce. It is low-carb, packed with protein, diabetic-friendly and tastes lush.

I absolutely adore this dish, if I could I would eat it every day. I love aroma of fresh dill mixed with creamy sweetness of mascarpone cheese. This, plus a glorious piece of Scottish salmon and king prawns! Belle pepper and garden peas add the color and some extra texture. Delish! 

Living in Scotland has many advantages and disadvantages, which I would think is true with any country in the World. One of the advantages is access to beautiful seafood. Proper Scottish seafood which is known all over the World for amazing quality and flavor. It always amazes me that I can get superb quality fish and seafood in nearly any shop and the choice is quite impressive. Love it!

How to make salmon and prawns in mascarpone and dill sauce

It is a very easy dish to put together in just 30 minutes. It is fresh, full for different textures and flavors.

STEPS:

  1. Fry salmon on a pan and set aside.
  2. Add sliced pepper on a pan and some spices and soften it.
  3. Pour in milk and add garden peas, bring to boil.
  4. Add fresh dill, prawns and salmon and cook together for few minutes until prawns are cooked.
  5. Serve hot on its own or with rice, or pasta or potatoes.

TIPS AND TRICKS:

  • If you can use fresh dill, it really makes the difference.
  • I recommend adding prawns at the very end and do not cook them for too long as they will become rubbery.
  • Fell free to add any other vegetables if you wish, for example green beans, asparagus or broccoli etc.
  • I recommend using king large king prawns that have been already cooked. They have their digestive tracts removed and are safer to eat.

What does this tasty salmon and prawns dish taste like?

This seafood dish is incredibly tasty. The sauce is creamy and rich and is seasoned with fiery chili flakes, garlic, sweet paprika and fresh dill. I love all the different textures of meaty salmon, plump prawns, soft peppers and green peas.

How to serve this aromatic seafood dish

I serve this dish two ways:

  1. On its own. This dish is very filling so if my family is not very hungry I just add maybe more bell peppers to bulk it up.
  2. If my family is very hungry, I serve it with white rice or mashed potatoes. My husband prefers mashed potatoes, and I do not blame him. Potatoes and creamy sauce are a match made in heaven!

Of course, I highly recommend serving salmon and prawns in mascarpone and dill sauce hot!

Salmon and prawns in mascarpone and dill sauce

Scottish salmon and prawns cooked in creamy mascarpone and fresh dill sauce with garden peas and peppers. This dish is low-carb, diabetic-friendly and healthy.

Instructions

  1. Dry salmon with paper towel and season with salt and pepper.

  2. Pour oil on a small pan and fry salmon on both sides until just cooked. Set aside.

  3. In a deep pan pour some oil, add sliced pepper and chili flakes, stir.

  4. Add minced garlic, salt and pepper, mix and fry for few minutes. keep stirring constantly so garlic does not burn. If garlic is burnt it will be come bitter.

  5. Pour in milk, add peas (if you are using frozen they need more time to cook). Mix well and bring to boil.

  6. Remove pan from the heat, add mascarpone cheese, paprika and dill. Mix well.

  7. Add prawns and transfer cooked salmon. Cook together for few minutes until prawns are cooked through but not overcooked!

  8. Serve with mashed potatoes or pasta.
