I have decided to start my Christmas baking with this recipe for walnut snowball cookies! The easiest, the crumbliest and the best shortbread nutty cookie! These cookies are dead easy to make, they are eggless and vegetarian.

Did I say walnuts? Yes I did, walnuts for me are Christmas nuts and I love using walnuts in my baking, especially that I have my own walnut dealer – my Mum! She has a walnut tree in her garden. Every year around October she sends me a nice package with ingredients from Poland and she always includes a massive pack of walnuts. THANK YOU Mum!

How to make walnut snowball cookies

This recipe is perfect for beginners.

To make walnut snowballs you need to toast walnuts first and let them cool. Then divide walnuts into 2 portions – 100g and 60g. Blitz 100g of walnuts into a food processor until fine crumbs. Then chop the remaining walnuts into small pieces and set aside. Now cream butter and brown sugar, add vanilla and flour and mix. Then add all the walnuts. Mix all the ingredients until cookie dough forms. Divide cookie dough into small balls, place them on a baking sheet and place in a fridge for 1 hour. When you are ready to bake, preheat oven to 160C (320F) and bake cookies for 10 -12 minutes until golden brown. When cookies are ready, remove them from oven and roll hot cookies in powdered sugar. Set cookies aside. When cookies cool down, roll them in powdered sugar again.

What do walnut snowball cookies taste like?

These cookies taste fantastic. They are similar to shortbread. The texture is crumbly and sandy and snowballs literally melt-in-your-mouth. The walnut flavour is very prominent and addictive. Once you try one cookie you will not be able to resist eating 5 more. Make sure you make a double or triple batch.

Recipe substitutions

I had a surplus of walnuts therefore I used them to make these cookies. If you want, you can substitute walnuts with pecans, pistachios, brazil nuts, peanuts, hazelnuts or almonds as you wish. I would not recommend using cashews ( which are actually seeds – who knew!) because the texture is too soft and would affect consistency of snowballs.

How to store walnut snowball cookies

Store walnut snowballs in a cookie tin at room temperature for up to a week. You can also freeze these cookies for up to 3 months.

Nutty and buttery walnut shortbread cookies covered in powdered sugar

Instructions

  1. Prepare 2 baking sheets lined with baking paper and set aside.

  2. Take 100g of walnuts and blitz it into a powder (using a small food processor).

  3. Chop the remaining 60g of walnuts into small pieces.

  4. In a medium bowl cream together butter and soft brown sugar until fluffy.

  5. Add vanilla and flour, mix.

  6. Add both portions of walnuts and mix well until cookie dough starts to form.

  7. Scoop the cookie dough into small bowls - the weight of my cookie portions was 25g each. I made 27 cookies. I always use kitchen scale to weigh my cookie dough for consistency and the best results.

  8. Place cookie balls on the baking tray and place it in the fridge for 1 hour.

  9. When you are ready to bake, preheat your oven to 160C fan (320F).

  10. Bake cookies for 20 min until golden brown.

  11. When cookies are still hot, roll each cookie in powdered sugar and place them on cooling rack.

  12. The sugar will melt but do not worry, it is ok and it will help the second coat of sugar to stick.

  13. When cookies cool down completely roll each cookie in powdered sugar again.
