Three days left till Christmas Eve, finally. I thought this day will never come. Work is over and I have time to share my new recipe for Pierniczki- Polish gingerbread cookies.
My new recipe is not only easy but is ready in less than an hour! Let’s start then!
What are Pierniczki – Polish gingerbread cookies?
Pierniczki are Polish gingerbread cookies made for Christmas time. Traditionally they are made using real honey and gingerbread spice. When I was a kid my Mom used to make hundreds of these gingerbreads as a gift for family and friends.
Fun fact – Pierniczki in Polish means gingerbreads (plural). Pierniczek means one gingerbread (singular).
Is it difficult to make Pierniczki?
Absolutely not! You can make these cookies in less than an hour. They require very few ingredients and little effort. The cookie dough is very easy to work with, it has a consistency of a play dough. You can prepare cookie dough in advance and store in the fridge for up to two days. Then when you are ready to bake, bring the cookie dough to a room temperature. Roll it 0.5cm thick and cut out any shapes you wish. Then you just have to bake them and done. You can decorate your gingerbreads any way you like. As you can see, my decorating skills lack a little bit but I am still pretty proud how my pierniczki turned out 🙂
How to store Pierniczki?
These cookies should be stored in a dry room temperature environment. Ideally in a cookie box with a lid. Undecorated cookies will last a month or so. For such reason I always bake these cookies first during Christmas season.

Pierniczki – Polish gingerbread cookies
A traditional recipe for Polish pierniczki - honey gingerbread cookies

Prepare two large baking trays lined with baking paper and set aside.

In a medium pot melt butter and honey. Do not boil! Just melt until you get a liquid consistency. Let it cool for 5 min.

In a large mixing bowl add flour, soda, gingerbread spice, egg, salt, sour cream and sugar. Mix until combined for a minute.

Add honey and butter to the mixture and mix until you get a unified dough. Mix for about 5 minutes. The consistency of the dough should resemble play dough.

Prepare a working area, rolling pin and cookie cutters.

Divide the dough into four portions.

Preheat your oven to 170° C (Fan).

Sprinkle a little bit of flour on a working area and roll a portion of dough, 0,5 cm thick. IMPORTANT: the thickness of the dough will affect the consistency of gingerbreads.
If you roll your dough very thin cookies will be crunchy and hard. If you roll dough thicker, cookies will be soft and pillowy.

Cut out dough using your cookie cutters and place the cut outs on the prepared baking sheets,

Repeat the process with the remaining dough.

Bake cookies for about 10-12 minutes (depending on the oven).

Let the gingerbread cool down and decorate it to your liking.

You can store undecorated cookies up to a month at room temperature in an airtight container.
Hi Judith. Thank you for your comment. At the moment I do not provide other measurements in my recipes than metric. I use metric measurements as they are the most reliable in baking. You can purchase an inexpensive kitchen scale and then you will be able to make recipes in metric as well. Hope it helps. Have a great day. Anna K.
