Apple and coconut cake

If you like apples and coconut you will delighted to make this apple and coconut cake. Succulent, moist and incredibly fluffy coconut cake with grated apples and caramelized apples on top. Easy and mouth-watering.

I never thought that the combination of coconut and apples can taste so good. But it actually does. A piece of this wonderful cake will go perfectly with a cup of tea or coffee. It is no fuss recipe perfect for a beginner or even making with your kids.

How to make apple and coconut cake

The below recipe is really easy to make and the results are fantastic. The only painful task will be peeling and grating apples but it will be worth it.

So to make this cake, you need to peel and grate 2 apples ( leave the third one to add on top) and mix it lemon and set aside for later. Then slice the third apple, mix with lemon and set aside. Now you need to mix wet ingredients and fry ingredients until just combined. Then mix in grated apples and coconut. Pour the cake butter to the cake tin. Decorate with sliced apples and coconut and bake for about 40 minutes. Easy.

TIPS:

  • Sieve flour and baking powder, it will help to distribute ingredients evenly.
  • Do not use Bramley apples as they will make cake quite wet. Save them for making apple pie.
  • Do not overmix the butter. It will help cake to bake fluffy and tall.
  • Let the cake to cool down completely before slicing it.

What does apple and coconut cake taste like?

Sweet coconut and tangy apples are a great match. The texture is moist, light, fluffy, it is like eating a coconut cloud with a hint of apples. Fantastic.

How to store apple and coconut cake

Store the cake in a fridge in an air-tight container for up to a week. Freeze it for up to three months. In order to defrost it, just take out from freezer and bring to toom temperature.

Apple and coconut cake

Succulent, moist and incredibly fluffy coconut cake with a  grated apples and caramelized apples on top.

Instructions

  1. Prepare 20 cm round cake tin, grease it and line it with parchment paper. Set aside.

  2. Peel and core apples. Grate 2 apples on a coarse grater (you should receive about 80 grams of grated apples).  Place grated apples in a medium bowl and add 2 tsp of lemon juice. Stir and set aside.

  3. Slice the remaining apple thinly and put it in a small bowl, sprinkle 10 grams of sugar and add 2 tsp of lemon. Stir and put aside.

  4. Preheat oven to 170C fan.

  5. In a medium bowl beat eggs, vanilla and sugar until pale and fluffy. It should take around 7-8 minutes. 

  6. Add oil and milk and mix all ingredients well.

  7. Add flour and baking powder and mix with a spoon until just combined. Do not overmix.

  8. Add grated apples and coconut. Mix.

  9. Pour the cake mix into the cake tin and place apple slices on top. Sprinkle some coconut.

  10. Bake for 40-45 minutes. Always check if the cake is ready using a toothpick or a kebab stick.

  11. Let the cake cool for 10 min and then remove it from the tin and let it cool completely on a cooling rack.

  12. Store in a fridge for up to a week in an air-tight container.  You can also freeze it for up to 3 months.
