I want to point out that I am not a genius behind the idea to make cookies that will resemble coffee beans. Damn, I wish it was me, but nope! Maybe next time!

The idea to make a cookie that resemble a coffee bean has been born in Korea, unfortunately I do not know the author, so if you know the name behind the idea, please let me know so I can give credit.

The recipe itself is quite basic but bloody hell, there is so many recipes for these cookies on the Internet that I have decided to make my own and after a few trials and errors, this is my version of the best coffee beans cookies.

Are coffee beans cookies easy to make?

Yes, they are very easy to make. This recipe is perfect for a beginner. They only think you need to do is to mix all the ingredients together following the steps in a recipe card. In my opinion the most difficult and time-consuming part is to shape cookie dough into coffee beans shapes. This is it, there is no real science behind it.

Coffee beans cookies are crispy on the outside and fudgy in the inside, wit a prominent coffee flavour (thanks to adding a real espresso liquid and coffee grinds). These cookies will not disappoint!

Coffee beans cookies

Instructions

  1. In a medium bowl add butter and sugar, cream until the mixture is light and fluffy, for about 6 minutes.

  2. Add egg yolk and vanilla and mix well.

  3. Add espresso coffee and coffee grinds and mix well.

  4. Add cocoa powder, corn flour and AP flour and mix well until you get a unified cookie dough.

  5. Cover the bowl with a cling film and place it in the fridge for at least one hour, or overnight.

  6. When you are ready to bake, prepare one baking sheet lined with baking paper and set aside.

  7. Preheat your oven to 165C° fan.

  8. Divide your cookie dough into small portions, I used kitchen scale to weigh my cookie dough to make sure all my cookies are consistent. Each cookie dough portion was roughly 20 grams.

  9. Shape each cookie ball into a log and then round the edges so it resembles a coffee bean.

  10. Using a knife or a kebab stick, make a small incision in the middle.

  11. Place your cookies on the prepared baking sheet. You can place them closely as cookies will not spread.

  12. Bake in the preheated oven for 12 minutes.

  13. When cookies are ready, remove them from your oven and let them rest on a baking sheet.

  14. Store in a room temperature in an air tight container for up to a week.
