Baked cod in garlic and tomato

Juicy and flaky baked cod with sun-dried tomatoes and garlic topping.

Instructions

  1. Prepare medium baking tin lined with baking paper, set aside.

  2. Preheat oven to 160C° Fan

  3. Add garlic, tomatoes and spices into a small food processor and grind until smooth.

  4. Stir in olive oil into tomato mixture.

  5. Cut cod into 4 portions and dry each portion with a paper towel.

  6. Place fish on the prepared baking tin.

  7. Spoon tomato and garlic mixture on top of each portion of cod.

  8. Bake fish in the oven for 20 min or until cooked through.

  9. Serve hot with your favourite vegetables.
