How to make cheese and herbs brioche bread
In order to make this giant bread you have to follow the standard bread making steps.
First you need to warm up milk and sugar. IMPORTANT, please do not boil the milk. High temperature kills yeast and your bread will not raise. Then you add yeast to milk and mix. Then in a large bowl you need to mix flour and eggs. After this you pour in milk mixture to the flour mixture and knead the dough until smooth. For about 10 min. Then you need to add melted butter and knead for another 10 minutes. When the dough is ready, cover it tightly with a cling film and kitchen towel and let it raise in a warm place for about 2 hours. How to put together cheese and herbs brioche bread
Now this part will be a little bit messy.
You need to roll the dough on a working area and add cheeeeeese, I mean go wild like I did, as life is too short to be skimpy with cheese and worry about cheese and calories and all of this jazz, right? Throw in whatever you like, melty Jack or Mozzarella, Edam, Maasdam, Cheddar – the sky is the limit. The more the merrier and tastier. Then you need to roll the dough into a big fat log, slice it vertically into half and twist it. Then arrange the dough into a circle. Moreover, you will notice that pieces of cheese may fall off but do not worry about it, just pick it up and add it at the end on the top of your bread. Brush with an egg and bake.
How to serve cheese and herbs brioche bread
This giant brioche bread loaded with cheese and herbs is super fluffy, puffs up beautifully and tastes heavenly straight from the oven – just look at it! You can slice it or just tear it apart and serve it with cold beer. Yep, this happened in our house and my better half could not be happier.
If you have any leftovers, you can just slice it and heat it up on a pan with some butter and serve with an egg on top. Just perfect and easy breakfast right here. You can also serve this bread as a side with a soup.

Cheese and herbs brioche bread
Super fluffy and soft and super cheesy giant bread. Very easy to make and just amazingly tasty.

In a small pot add milk and sugar and warm it up. Do not make it too hot! If you add yeast to a hot milk you will kill yeast.

Add yeast to the warm mixture and set aside for 10 min.

In a large bowl add flour, salt and eggs. Mix roughly with a spoon. Then add yeast mixture.

In a small pot melt butter.

Knead the dough well for about 10 min and then add melted butter.

Keep kneading the dough for another 10 min.

Cover the dough with a cling film and kitchen towel and then let it raise in a warm place.

When dough doubled in size, roll it on a clean surface , about 1 cm thick.

Sprinkle herbs and cheese on top and roll it into a log. Keep pressing the dough tight while rolling so the herbs and the cheese stick to the dough.

Cut the log in half vertically. Twist the pieces of dough around each other so you can you expose cheese.

Then roll the messy log into a circle, making sure you tuck the ends under the loaf.

Press the remaining cheese that fell off on the top of the bread dough.

Cover the dough with a kitchen towel and let it rise for about 30 min in a warm place.

Preheat the oven to 200C fan.

Brush the remaining egg all over the dough and bake dough for about 35-40 min.

Remove bread from your oven and place it on a cooling rack.
