I am Polish and I love potatoes more than anything. Mashed, roasted, boiled, grilled, fried – it really does not matter. Potatoes are so versatile and I am not sure if I know anybody from my family or friends who does not like potatoes. Today’s recipe for a side dish is easy and amazingly tasty and nobody will be able to resist it- crushed potatoes with dill and garlic. If you have not tried matching potatoes with dill, you are missing out!

How to make crushed potatoes with dill and garlic

The story starts with parboiling potatoes until just soft. This step is necessary in order to make potatoes fluffy and cut the roasting time. I did not peel my potatoes as I love crispy potato skins. Then I poured over melted butter and sprinkled fresh dill. Adding that much butter is necessary for potatoes to cook nicely and get the crispiness. I would even encourage you to add more butter if you wish. 100g is the minimum for 700g potatoes. I also advise to use fresh dill than dried one. The difference in flavour is immense. Adding garlic at the end of a roasting time is important. If you add garlic at the beginning it will burn and become bitter. The whole dish will not taste good.

How to serve crushed potatoes

When it comes to serving this dish, the options are unlimited. You can add this tasty side dish to your dinner and serve it with any meat like lemon and garlic baked chicken drumsticks or fish like tandoori masala swordfish steak. Personally, I love serving this dish with my baked cod in garlic and tomato.

Crushed potatoes with dill and garlic

Instructions

  1. Parboil potatoes, until just soft. Drain them and let them cool down.

  2. On a medium pan, add butter, parsley and two tablespoons finely chopped dill. Let the butter melt and mix all the ingredients.

  3. Preheat an oven to 180C fan.

  4. Transfer potatoes on a large or medium baking tray, crush them with a fork.

  5. Pour melted butter all over the potatoes, mix well.

  6. Sprinkle additional dill on top and put the tray in the oven for about 40 min.

  7. Remove the tray from the oven every 10 min and turn the potatoes on the other side so they can crisp up evenly.

  8. When potatoes are nearly done - about 5 min roasting time left- remove tin from an oven and add minced garlic. Mix well so garlic is distributed evenly and place tin back in an oven.

  9. Serve warm with sour cream or yoghurt.
