Wonderfully soft and fudgy chocolate and mint cookies made using After Eight chocolates.

There are many flavour combinations that divide people all over the World and chocolate mint flavour combo is definitely one of them. I have no idea why because, personally I adore these two together. I hope that my new recipe for fudgy chocolate and mint cookies (After Eight cookies) will convert all opponents into chocolate and mint combo enthusiasts!

What do the fudgy chocolate and mint cookies taste like?

These cookies are very rich, dense and chewy. Obviously the chocolate flavour comes from cocoa and chocolate with the mint shining through using a generous amount of After Eight.

What is After Eight? Well, they are mint sugar confectionery covered in dark chocolate, very popular in the UK. You can use other mint flavoured chocolates if you wish. I tested this recipe using different mint chocolates but After Eight work the best. They dissolve in the cookies, making them soft and gooey.

If you are living in the US you can use Andes Chocolate mints as an alternative.

Will these cookie spread?

Yes, these cookies will spread quite a lot because of a high sugar content from brown sugar, semi-dark chocolate and After Eight. I highly recommend to bake a maximum of 6 cookies per large baking tray or even 4 cookies if you are using a smaller tray.

Do not worry if these cookies have irregular shape after baking, you can easily fix it by swirling a large round cookie cutter around the cookie.

Fudgy chocolate and mint cookies

Making cookies

  1. Prepare 2 large baking sheets lined with a baking paper and set aside.

  2. In a medium bowl beat together butter and sugar until soft and fluffy.

  3. Add egg and vanilla extract and mix well. Set aside.

  4. In a medium bowl mix flour, salt, cocoa powder and baking powder. Set aside.

  5. Add flour mixture to the butter mixture and fold in together ( using a spoon) until all the ingredients are blended together.

  6. Stir in chopped After Eight chocolates.

  7. Place cookie dough in the fridge for about 30 minutes.

  8. When you are ready to bake, preheat your oven to 175C° Fan.

  9. Using a medium sized cookie scoop, place 6 portions of cookie dough on each baking tray. Leave about 3 cm gap between each cookie dough as the cookies will spread.

  10. Bake cookies in a preheated oven for about 12 minutes.

  11. Remove cookies from the oven.

  12. Using a cookie cutter - (that is bigger than an actual cookie) or a large glass etc or other round kitchen utensil and swirl it around the cookie. Or just grab a spoon and bring the edges of a cookie closer to the center. This step works the best when cookies are straight from the oven, soft and easy to work with.

  13. When you are happy with the shape of your cookies, add one After Eight on top of each cookie.

  14. Leave the cookies on baking trays to cool down completely.

  15. Store in a fridge for up to a week.
