Yep, I said it. I can not complain about it as it gives me more freedom on what the great breakfast is supposed to look and taste like. If my husband was responsible for breakfast, I would be served fried bacon with bacon and a side of bacon…. so I am glad I have a power over what we eat. This time I decided to serve this amazing and nutritious pumpkin pesto fried eggs.

How to make pumpkin pesto fried eggs

First I would suggest making one portion of my homemade pumpkin pesto sauce. Then the process is pretty smooth. Heat up a medium pan, add butter and two tablespoons of pumpkin pesto. Mix and fry it for a minute. then add 2 eggs. Put a lid on and cook eggs for few minutes to your liking. When eggs are ready transfer them on a plate, season with salt and black pepper. Sprinkle some chives and add your favourite vegetables. Voila!

What do pumpkin pesto fried eggs taste like?

This dish tastes heavenly, it is light and will fill you up for a long time. The creamy, earthy pumpkin pesto blends delightfully with rich egg yolks. Fresh chives and radishes add freshness to the whole dish. You can omit the radishes if you do not like them and replace with vegetables of your choice.

Super easy and delicious breakfast idea with homemade pumpkin pesto and soft fried eggs. This breakfast is absolutely scrummy, low-carb and idiot-proof.

Instructions

  1. On a medium pan with a lid add butter and two tablespoon of pumpkin pesto, heat it up.

  2. Add two eggs on top, put the lid on the pan and simmer the eggs for about 6-8 minutes depending on how you like your eggs done.

  3. Transfer eggs and the remaining pumpkin pesto sauce on a plate.

  4. Season your eggs with fresh black pepper and salt.

  5. Arrange sliced radish on the eggs and sprinkle chives.

  6. Serve warm.
