Salted caramel buttercream frosting is silky, smooth and simple to make. My recipe is based on homemade salted caramel sauce which makes this buttercream so delicious an irresistible. This easy buttercream is perfect for decorating, cakes, cupcakes, cookies you name it. It is gluten-free and vegetarian as well.

How to make salted caramel buttercream frosting

Making homemade buttercream is pretty straightforward. This recipe is no different but you need to decide whether you are going to make your own salted caramel sauce or use shop-bought. I will always advocate for making your own as it just tastes better and does not include any weird ingredients.

If you use homemade salted caramel, make sure you make it first. It needs time to cool down before mixing with butter. I highly recommend my recipe for homemade salted caramel sauce. Make sure you follow the instructions and cook it until it is nick and thick.

You can of course buy salted caramel but please remember it has to be thick!

TIPS and TRICKS:

  1. Use room temperature unsalted butter.
  2. If possible, use a high quality butter with at least 82% fat. It really makes the difference!
  3. Cream butter until it changes the color into white and becomes very fluffy.
  4. If you are making your own caramel, you can make it even 4 days in advance. Remember to bring caramel to room temperature before adding to butter.
  5. This recipe makes enough buttercream to fill in the 23cm (9 inches) , 2 layer cake or decorate 12 cupcakes.

How to use this sweet and salty buttercream

Salted caramel buttercream frosting is very versatile and you can use it many different ways:

  • It is great to decorate cakes or cupcakes. It pipes beautifully and allows to create nice designs.
  • Use it as a filling for cakes, cookies, macarons etc.
  • I often serve this buttercream frosting as dip for my homemade cookies, crackers or pretzels.
  • When I am desperate for dessert but have nothing on hand, I use this salted caramel buttercream as a spread on a toast, works magic.

How to store caramel buttercream

I always make a double or a triple batch of this sweet and salty buttercream as it stores very well:

FRIDGE: Place buttercream in an air-tight container or a jar and store it for up to a week.

FREEZER: Spoon this delicious salted caramel frosting into a freezer-friendly bag or to a freezer-friendly container and freeze it for up to 3 months. If you want to defrost it, just remove frosting from the freezer and leave it at room temperature for at least one hour.

  1. Please read recipe post as well. It includes storage direction and other useful information. 

    I always recommend using a kitchen scale to weigh ingredients as it helps to achieve the best results. The US measurements in cups are the estimate and I can not guarantee the best results.

  2. For this recipe you will need thick salted caramel sauce and butter and sugar. You need to decide whether you are making your own caramel sauce or use shop-bought.

    If you are making your own, you need to make salted caramel first so it has time to cool down completely before adding it to butter.

  3. This recipe is based on my homemade caramel sauce which is quite thick and helps to create a stable buttercream. This is the recipe I used https://kitchenbyannak.com/recipe/homemade-salted-caramel-sauce/. Runny caramel sauce will not work and will make buttercream very soft.

  4. In a medium bowl cream butter until light and fluffy, for about 20 minutes. Butter should be very light and turn white.

  5. Sift in icing sugar and cream together for few minutes. Do not skip sifting in this step, it will help to get rid of any sugar lumps.

  6. Add thick salted caramel sauce, spoon at a time and keep creaming all ingredients together until you get the desired consistency and taste.

  7. Add more salt if necessary.
